Pumpkin Pancakes

Reviewed: Feb. 8, 2006
Perfect pancakes!! Just the right texture, very tasty, my husband and three kids all LOVED these pancakes! Only one thing I changed: I didn't have any allspice, so I substituted a little ground cloves and nutmeg and extra ginger.

Very easy and tasty! However, use the leanest beef you can find to keep it from being greasy.

Cindy's Pumpkin Pie

Reviewed: Oct. 31, 2003
PERFECT! I won a pumpkin pie contest(thanks, Cindy!) with this delicious recipe - it was sooooo creamy! The best pumpkin pie recipe - this is the only one I'll ever use. By the way, I left out the nutmeg, just because I don't like it, but I'm sure if you like nutmeg, it would be great in it.

Eggplant -- Easy, Good and Tasty

Reviewed: Jun. 24, 2003
Delicious!! I marinated the tomatoes in the italian dressing about an hour before I made this. Also, I suggest using a farm grown eggplant that you grow yourself or get from the farmer's market; you just can't beat it. Thanks for sharing this fabulous recipe!!

Best Ever Chewy Chocolate Chocolate Chunk Cookies

Reviewed: Apr. 12, 2003
WOW!!! This cookie recipe is outstanding!! They actually stay chewy, and taste delicious. Not to mention they are so easy to make. This is the only chocolate chip cookie I will ever make again! By the way, I sprayed my pan with nonstick cooking spray lightly and they came off perfectly.

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Mar. 10, 2003
Absolutely delicious!! I used 1/2 c. of oil and the cake was just perfect! It made alot of icing - I think I'll try it as a 2 layer cake next time instead of sheet cake to use all the icing.

White Chili

Reviewed: Feb. 12, 2003
This was surprisingly good to be so easy! Just be sure to have a brillo pad handy to clean the pot, that cheese is very sticky.

Beef Potato House Pie Casserole

Reviewed: Feb. 5, 2003
This was a little more preparation than I wanted, with the chopping of the onion, pepper and potatoes. I used ground turkey instead of beef, and I used also used garlic to season the meat. I added sour cream to the mashed potatoes. Didn't have process cheese so I used grated colby and monterey jack. It turned out pretty good. I will make this again, adding even more seasonings for more flavor, and I will make it ahead of time when my babies are napping so I can just pop it in the oven at dinnertime.

Yummy Peanut Butter Cookies

Reviewed: Jan. 19, 2003
These cookies were fabulous! Chewy and melt in your mouth! Next time, I will roll them in sugar then press out with a wet fork instead of dipping my wet fork in sugar. My sugar tended to clump, which only altered the looks not the delicious taste!

Maple Sausage Balls

Reviewed: Dec. 17, 2002
Delicious and easy recipe to take to brunches! I browned the sausage first and drained it, it makes them much less greasy if you want to cut down on fat. They are just as good or better that way!
