Sausage Stuffed Mushrooms II

Delicious! I used reduced fat cream cheese and sausage, though it was still a little more fattening than I would like. Also added garlic powder and some of the stems. I didn't want to deal with our broiler, so I just baked them in the oven, and they still turned out great.

Italian Portobello Sandwiches

Not exactly what I was expecting....there wasn't as much as a mushroom taste as I would have liked, and the mayo and bell peppers seemed a little overpowering. If I were to make it again, I would warm up the peppers a bit, and slightly toast the bread in the oven.

Cordon Bleu Chicken Rolls

I used a little more cheese than called for and rolled them in eggs and bread crumbs (instead of butter and cornflakes). My husband and I really liked the sauce, and it is especially good on fresh steamed asparagus. I didn't even think to add white wine, but I definitely will next time.

This is definitely something different. I used ground turkey, but I think next time I’ll try pork or beef. I didn’t have enough pizza dough, so I just saved what wouldn’t fit, and I’ll try it in regular pita bread tomorrow. Also, I can’t imagine rolling the thing without making a huge mess, so instead I put the ingredients on one side and flopped the other side over. (Make sure the ends are pinched well.)

Quick and Easy Green Chile Chicken Enchilada Casserole

My first thought is that this recipe in no way should be titled "Quick". Besides the one and a half hour total baking time, I can't imagine someone holding 36 tortilla halves over a flame for 1 minute each. The taste was okay. My husband liked it more than I did, but I may have been a little put off by the appearance.

BBQ Chicken Pizza

YUMMM!!! This is so good but only if you're a fan of BBQ sauce. I used way less cilantro and a little less chopped onion. I also put on jalapeno peppers instead b/c that's what we had on hand.

Red Beans and Rice

My husband is a big fan or red beans and rice and loved this dish. It's not quite my style, but I still thought it was good. The servings seemed huge, so I only made half the recipe and it was plenty. I also think I used more red pepper flakes and less paprika.

Caramel Apple Pork Chops

This is the second time I made it, and this time I took the recommendations of others and baked it (instead of pan frying)....sssooooo much easier! I added half a sliced onion and sauted it in the pan with the butter. Then I added the brown sugar mixture (tripled the amount) and then added the apples. I let that saute a few minutes while placing the pork chops in a baking dish. Then I put the whole mixture on top, covered it with foil and baked for 40 minutes in a 350 degree oven. I give it 4 1/2 stars.

Incredibly Delicious Italian Cream Cake

Truly is incredible! The first time I made it, the cakes stuck to the pan (even after greasing and flouring it). So the second time I used wax paper on the bottom of the pans, and it turned out great! I LOVE the icing!
