Cheesy Salmon Pasta

I made my own pesto sauce based upon a recipe I found on this site, which I used Kale instead of Spinach and 1% milk for half the oil. But other than that (which is just preference) this recipe was a great motivator! I used 3 cans salmon, and it gave such a rich and creamy flavor. Mmmm! I would recommend including a pesto recipe instead of just saying to use it, because you really need a good 2 cups of it per box of pasta, to make this dish moist and delicious. Thanks.

Cornbread Muffins I

Great taste!! They are a tad dense, but that's okay for chili. I used Canola oil instead of butter, omitted the honey, added a Tsp vanilla, and reduced the sugar to 1/2 cup (but 2/3 is fine I'm sure.) Plus I only had to cook them half the time in a conventional oven. They POPPED right up like popovers do! Cute :) I remembered to thaw the frozen corn first, so I didn't have a problem with the kernel texture. The point is that a home-cook could tweak the recipe and it still turns out delicious! Yumitty Yum.

Very Best Blueberry Cobbler!

I do NOT recommend adding vanilla; it made the flavor a bit "fake" tasting. The sugar was cut in half, because 1 cup is just too much. The topping could have also done without the cinnamon sugar, because it didn't add to the cobbler. I also had to add 10-12 minutes to the cooking time. I liked the fluff of the cakey texture (although more shortcake than cobbler) but the taste was not there regardless. In my experience, it was just OKAY in taste.

Peach Angel Food Cake

The Most Easy and Delish Meatloaf EVER!

Thank you! Thank you! I have been married almost 4 years and have put off making meatloaf for the fear of it turning out terrible. This recipe was fantastic!! I omitted the tomatoes and peppers combo, and replaced them with a healthy squirt of catchup, bbq sauce, mustard, and some extra spices into the meatloaf mix. Then I decorated the top with catchup for the entire baking time. I would only recommend that you empty the grease out half way through the baking time, or at least the last ten minutes, and then set the oven to broil for those last ten minutes. I loved the added crunch on top!!! I used 80/20 beef and the grease was still excessive, but nothing a little emptying half way wouldn't fix. My husband loved it too; thank you again!! I will not be afraid of meatloaf any longer :)

Ham Tetrazzini

Easter Ham leftovers filling your fridge? Try this Ham Tetrazzini and they will quickly disappear! I used whole-wheat medium shells instead of spaghetti, mozzarella in place of cheddar, doubled the ham, plus 1% milk instead of water, and it was delicious! First sauté fresh mushrooms and garlic for added yumminess :)

Yellow Cake Made from Scratch

Wow...so simple to make! It turned out spongy, fluffy, and just right! I turned the broiler on for the last 4 minutes to give it a great golden color and crisp. I only baked it for 30 mins, because I sifted the flour. I even added blueberries, which sunk a little and kept the middle even more juicy and yummy!!! LOVE this recipe, and WILL use again! Thank you muchly :)
