Mexican Beef Supreme

Reviewed: Feb. 26, 2006
Very tasty. I also let it simmer on very low for a long time, until the liquid reduced. Made for tastier beef.

Stuffed Shells I

Reviewed: Feb. 12, 2006
This was the first time I made stuffed shells. A few tips: use MUCH more sauce - it needs it. I used 1/2 ricotta and 1/2 cottage cheese (full fat, large curd). I tried a ziplock as a pastry bag, but actually found it easier to stuff with a spoon. And undercook the shells by a few minutes, cool completely, and they should be easier to fill. Thanks for a yummy recipe.

Sour Cream Chocolate Chip Cake I

Reviewed: Feb. 12, 2006
YUMMY! It makes a nice dense cake - not crumbly at all. I used a 9 inch square cake pan and it was perfect.

I'd give this 4.5 stars. It was very yummy and easy. Definitely add some corn starch to thicken.

Cheese Tortellini Caesar Salad

Reviewed: Jan. 15, 2006
This was yummy, but not very gourmet, if you will. Quite filling. Serve right before eating so that the dressing does not make everything soggy.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Mar. 22, 2005
Very yummy. I followed the most helpful rating and cooked the sauce on the side. This was good because some people did not like the glaze - I loved it.

Antipasto Salad

Reviewed: Mar. 13, 2005
A good basic recipe. I omitted the pepproncini. Added cherry tomatoes. This is good for a shower or party as well.

Lazy Lasagna I

Very good recipe. Needs some modification, though. Leave out the water. Add extra sauce, plenty more. And I used Bertolli's sauce with sausage flavor.

Italian Style Pork Chops

Reviewed: Mar. 6, 2005
I also halved the breading mixture. I used thin pork chops and cooked for 30 min on 400 degrees. I turned once during cooking.

These came out great! I flipped them 1/2 way through and uncoverd for the last 20 min. GREAT! They don't taste like crackers at all - just yummy! I also used 1/2 the butter recommended.

Baked Penne with Italian Sausage

I would say this is gets a 3.75 in my book. It was good. I made some changes. I added ricotta cheese with egg mixed in. I also used chick broth instead of wine. Good recipe.

Spinach Tortellini Soup

Reviewed: Nov. 24, 2004
This is a good basic recipe that needs some tweaking. First, you need a little more liquid - so add more stock. Also, cook the tortellini separate, so it doesnt get mushy. You can add some carrots or celery as well. I added add'l spices at the end because it was a little bland.

Easy Lasagna I

Reviewed: Jul. 12, 2004
5 stars in my book. I used part-skim mozz, 4% milkfat small curd cottage cheese and the remaining ingredients as listed. I also added one extra small can of tomato sauce - you might even want to add 2 extra small cans. Overall VERY GOOD!

Prune and Olive Chicken

Reviewed: May 8, 2004
This is a great recipe! I use boneless breasts and bone-in. I just cook the bone in longer. Don't do any fancy accompanyments, just plain rice or a green salad and you are good to go!

Baked Macaroni and Cheese

Reviewed: Apr. 2, 2003
A very good homestyle mac and cheese recipe. I added some extra cheeses (shredded monteray jack, parmesan) and it was great. I also sprinkled some plain bread crumbs on top before cooking. Very yummy. I'd make it again. Also good if you have a bunch of different cheeses laying around that you want to use up.

Muenster Chicken and Mushrooms

Reviewed: Feb. 11, 2003
I give this a 5, but it needs tweaking. I added lots of herbs and spices, as well as a little wine. Also, be careful not to overcook or it will come out tough. I cooked it for about 35-40 min and it was great. Thanks for a good recipe.

BBQ Meatballs

Reviewed: Dec. 14, 2002
I was excited to make such an easy recipe, but I was disappointed to find the taste too tangy and too spicy. The flavor was overwhelming (not in a good way). Needs to be toned down somehow.
