Rice & Beans (Haitian Style)

I used basmati rice (because that is what I had) and used a four cup liquid to a two cup rice ratio (the four cup liquid ratio included a 330ml can of coconut water to make the four cup liquid total). I also omitted the cloves, adobo seasoning, used a whole uncut jalapeno pepper instead of a scotch bonnet pepper, as my kids are not used to that kind of heat. My husband two "small" samplings before dinner because it was so good. The reason for the 4 star rating is for the tweeking of the liquid to rice ratio, as per what others had suggested.

Buffalo Chicken Wing Soup

I made this for my husband who had jaw surgery not too long ago. He cannot eat his much loved wings, so this is the next best thing. He loved the soup!!!

Mama Bear's Porridge

YUM...Very good and keeps you feeling fuller than ordinary oatmeal. I didn't have all of the ingredients (powered milk and raisins)used cup and a half water and cup and a half of 1% milk. Turned out great!!! I am going to make this again with chopped apples.

Quick Szechwan Sauce

As per suggestions, I reduced the amount of sugar. I used dried chili flakes,as I had no fresh. Nice amount of heat without overpowering the food!!!

Flourless Peanut Butter Cookies

Cod Fish Cakes

I prepared the potatoes and fish the day before. After forming the patties I dipped them in a mixture of equal parts breads crumbs and flour (as I found the patties to be sticky as I was forming them). Also, I baked the patties in the oven (425F) approx 12-15 minutes per side spreading a thin layer of vegetable oil on the bottom of the baking sheet (p.s. I have a gas oven,so temp may have to be adjusted). The fish cakes turned out good. This was the first time I have tried baking the patties instead of frying, as I wanted to cut back on the amount of oil used.

Pina Colada Cake III

I did not have a bundt pan, so I used a 9x13 inch pan instead and reduced the cooking time to 45 minutes. Also used a can of Barcardi pina colda mix instead of the cream of coconut. The cake turned out very moist and yummy!!! I will make this again and maybe even try it with coconut rum.

Rhubarb and Strawberry Pie

I made this as per directions, even adding a bit more flour and a heaping tablespoon of cornstarch. I found it WAY too runny. I think my Mom use to add an egg to her filling mixture, so maybe I will try that next time.

World's Best Lasagna

This was THE BEST lasagna recipe I have tried. I did not have fennel seeds, used hot Italian sausage instead of sweet. Other than that followed the recipe to the letter. Made two trays of it for a family gathering and got rave reviews. Thanks for sharing this recipe!!!!

Baked Dijon Salmon

Loved this recipe!!! Didn't have pecans, so I used ground almonds. I cooked my salmon at 400F instead. I also marinated the salmon for three hours before I put on the crumb mixture. The end result terrific. I will use this one again!!!
