Jenny's Jambalaya

I was not able to use an electric skillet as the recipe called for, instead I used the stove-top equivalent. That was the only adjustment I made in this recipe. This recipe gets three stars (instead of one or two) from me because it turned out and was edible. I've been looking for a great jambalaya recipe and will definitely keep looking. It just wasn't anything special or even all that great. Additionally, there is absolutely no reason to cook shrimp for 20-25 minutes. In a heated covered pot, shrimp will cook in just a few minutes. I can't imagine a scenario when over 10 minutes would be necessary. The 20-25 minutes made the texture of the shrimp quite unfortunate.

Italian Cookies II

For what these cookies ARE (they are not sugar cookies, etc), they are amazing. Perfectly soft, coupled with a nicely complementing sweet icing.

Cream Cheese Frosting II

I've been waiting for the "perfect" cream cheese frosting to go with the "awesome carrot cake"... as the frosting listed there is good, but not quite what I wanted. This frosting is really cream cheesy... what's the point of cream cheese frosting if you can't taste the cream cheese? If you feel this way, this recipe is for you.

Chicken Marsala

This was a great recipe that everyone loved. I try to save my five-star ratings for dishes that knock my socks off (this one hit slightly under that), but this gets a five because of it's simplicity to prepare. Very easy (pretty quick, too) and very good.

Spectacular Marsala Glazed Carrots with Hazelnuts

These were dreamy, plus the presentation is very nice and the tastes a unique combo. Nice for a fancy dinner at home, but a great compliment to a regular dinner too!

Ultimate Irresistible Granola

After trying a few different granola recipes that didn't deliver, I've settled on this one. I've made it several times, and will make it several more. While the recipe is great just as it is, I like adding an additional cup of oats (this cuts down on potential oiliness), playing around with the various dried fruit options (still keeping the total at 2 cups) and especially like adding a bit of kosher salt when adding the fruit. The kosher salt gives it this great sweet/salty thing that everyone who tries it favorably comments on. So far it seems that this recipe can sustain quite a bit of tinkering, which I find fun and freeing! I'm always changing amounts depending on what I have on hand, I've even added whole wheat flour for a thicker consistency and the recipe always transitions beautifully. Thank you for a great granola recipe!

Bean Soup

This is such a great "traditional" bean soup. I used the baking soda quick soak method mentioned by a previous user (it worked like a charm) and added ketchup for color, texture, and a little flavor.

Baklava

This recipe is absolutely delicious and well worth the effort. Thoughts: Next time I will probably try to score the baklava and then cut it after it comes out of the oven (as suggested by Mark Bittman). I also recommend having a second person to help with the assembly.

Herb and Garlic Cheese Spread

very good. does not taste like alouette or anything, but very good! I would recommend using a little less butter and a little more cream cheese. equal parts of both makes it quite buttery.

Dip For The Stars

This dip is raved over everytime. I served it at a dinner party and between 8 people the entire recipe was gone (that is a LOT of dip!). I've been asked to make it several times since. What is especially impressive is that since things are whipped together in the food processor, all of the flavors melt together beautifully, and no one knows what makes them love it so much! If I paid top dollar for this at a restaurant I would not be disappointed.

Chocolate Trifle

This was just okay. It tasted like the different parts just stacked together... I didn't really feel like the layers particularly added anything to each other. It was beautiful, though. I did serve it at a dinner party, and we were all so excited because it was so pretty, but then it kind of disappointed. Maybe our expectations were too high, but we did not have the out-of-the-ball park experience that other reviewers experienced.

Awesome Roast Beef

This dish was very easy and turned out moist like promised. It didn't seem to be absolutely bursting with flavors (maybe the addition of some onion would help?) but it was very easy. We had leftovers that made great sandwiches.

Honey Pork with Peppers

This is so easy and smells and tastes delicious! It is especially good because while one part is cooking you can prepare the next part. I would also recommend mixing wet and dry ingredients together separately before adding to the pan.

Carol's King Ranch Casserole

This recipe is great! I accidentally put extra green chiles in there, but it turned out great! I would also suggest layering a very small layer of the mixture on the bottom first to help moisten the first layer of tortillas.

Gourmet Chicken Pizza

My husband went nuts over this pizza! I "sauteed" the shredded chicken in butter with basil and garlic salt and it gave it a nice flavor. I also would recommend spreading the ranch generously. I also added mushrooms which fit the ensemble perfectly!

Quick and Easy Pizza Crust
