Magic Cookie Bars II

A crowd pleaser!! I have been making these for years. Instead of graham cracker crumbs for a base, I use left over/stale chocolate chip cookies or brownies. Chop them up in the food processor and spread as base. I increase the base layer to 2 cups.

Alphabet Soup

This recipe was easy, yummy and it's always fun to eat Alphabet Soup!! I decreased the TOTAL amount of water to 6 cups (instead of 9) I also added 2 extra bouillon cubes to the simmering soup (for a total of 5 cubes). I added a full tsp of salt and a full tsp of pepper. I also added 1/2 tsp of onion powder. I allowed this soup to simmer a full hour to increase the flavor- many people said this recipe was bland, but my husband and I disagree and thought it was delicious!!! A keeper!!

Turkey Veggie Meatloaf Cups

This is a great, easy, fun dinner! :) My husband loved it and asked that we have it again. I followed the recipe, but used 1/2 a green pepper and 1/2 a red pepper. I also used 3 tbsp of onion flakes instead of real onion due to personal taste. While they were great, they were a little bland. Next time I will add salt, pepper and garlic. The BBQ sauce slightly burned the edges of the "muffins" so I would recommend putting the BBQ sauce on near the end of cooking time.

Chocolate Scotcheroos

I have been making scotcheroos for years, and this recipe is by far a simple best!! At the suggestion of other reviewers, I increased the Peanut Butter and removed the corn syrup mixture from the heat when I first saw bubbles around the edges of the pot. I also doubled the choc and butterscotch chips for the topping (2 cups of each). I thought 1.5 cups for each would be sufficient next time, However, everyone that enjoyed one thought the top was nice and thick. These were soft, chewy and gone quickly!! Great recipe!!

Chocolate Zucchini Bread

Awesome!! Instead of raisins I added 3/4 cup of mini choc chips. I'm glad the recipe made 3 loaves! After sharing with friends and family my husband and I barely had any left for ourselves. Will keep this recipe as a favorite!!

Oven Baked Zucchini Fries

This recipe is a fun way to use zucchini. However, the breading on was a little overpowering. If I try this again I will REALLY shake off the excess coating (had I coated the fries less I would have rated this recipe higher). I didn't have Italian seasoned bread crumbs so I used regular and added italian seasoning. I used 3 zucchini's so tripled the recipe to have enough mixture. I would recommend adding the breading mixture to pie plate as needed. the butter/marg makes it clumpy so the final fries are hard to coat. I also made the Garlic Ailoli and added roasted red pepper for dipping.
