Amaretto Cheesecake I

Really good! I used Nilla wafers instead of graham crackers and I doubled the crust. I also added 1t Almond extract and created a glaze from Amaretto, butter and powdered sugar. My husband thought it had too much almond flavor but my son and I loved it. It was especially good with cherry pie filling as a topping. Husband liked it a lot with the cherries.

Marshmallow Fondant

This tastes good. It was a little soft to work with. It wouldn't be good for sculptures that require more structure. The fondant you can buy is stiffer and works nice for shaping but it tastes like paper. I prefer it to taste good if I have to choose between taste and structural quality.

Christmas Breakfast Sausage Casserole

A good base recipe but we all felt it needed something more. I want to try it with the garlic croutons instead of bread and I think adding some green chili would be good.

Basic Truffles

These taste okay but they are difficult to work with. I end up putting the mixture in my cake decorating tube and piping it into molds that I have already prepped with hardening chocolate. Then I add more hardening chocolate on top and they come out okay. I made the recipe with cream cheese this year and found the consistency much better to roll and then dip. I think the cream cheese recipe tastes better too.

Easy Decadent Truffles

I think I like these better than using heavy cream. The slight tang cream cheese with the sweet of the sugar and chocolate is rich. I only used 2C of the powdered sugar and I added 2T of Amaretto. They are divine!

My Crab Cakes

I baked these and served with a sauce made with Mayo, Dijon mustard, ketchup, hot sauce, finely chopped green onion, cayenne powder, and Worcester sauce. They were very good, especially with the sauce!

Best Steak Marinade in Existence

I used rice vinegar instead of lemon because I didn't have lemon. I also did not have white pepper so I left that out and used 1 tsp of hot sauce. I put it in the Foodsaver marinade container and let the machine do its thing for about 30 minutes. Family loved it! I will use this marinade many times again!
