About this Cook
I'm a 40-ish wife and mom. I think I'm a pretty good cook. My husband brags about my cooking all the time. However, I don't consider myself a "foodie." I am not even sure what that word means. I love tweaking recipes and figuring out how I could improve upon it. Favorite cooking show: Good Eats with Alton Brown. I have two little boys who can be picky eaters. I prefer quicker recipes; e.g. 30 minutes or less, but sometimes will take the time to do something more involved.
My favorite things to cook
Pastas!!! Casseroles, slow cooker recipes. When it's hot out...creative sandwiches, and more slow cooker stuff (doesn't heat up the kitchen.)
My favorite family cooking traditions
Funny, I don't think there's any Italian in my family but those are some of my favorite cooking traditions, i.e. slow-simmered tomato-based sauces. (Probably other cultures do tomato-based sauces but I am not familiar with them.) Also, lots of Eastern European & German stuff..stuff with cabbage and sauerkraut.
My cooking triumphs
A Good Housekeeping recipe for Cranberry-Balsamic Chicken with roasted Brussels sprouts. Stringy Macaroni. My cookie-baking.
My cooking tragedies
Grilled pre-packaged chicken kabobs wrapped in bacon and undercooked them and gave my husband food poisoning!

Apple Brownies
These are SOOO good. I ate most of the pan. Be aware though, they're not really brownies. I'd call it more like "apple snack cake" or something like that. As someone else mentioned, I think I would cut the apples into chunks next time, not slices. I want to make them again, next time I'll try putting the vanilla in like someone suggested.

Healthy Honey Carrot Cookies
I will say this recipe has potential. I did as some suggested and used 2 eggs instead of one. They were not dry at all. I also put in 1/2 tsp ground cinnamon and 1/4 tsp nutmeg as someone else recommended. I didn't have any lemon extract, but I had orange zest, so I put in about a tsp of orange zest. Still kinda bland. Maybe more cinnamon? More sugar would also help. But part of the reason I made these is because I don't have any white sugar or brown sugar in the house! These will be good for my first grader to take to school for his mid-morning snack.

Classic Bran Muffins
Awesome. I added 1/4 tsp. cinnamon and they were excellent. A keeper.
