Quinoa and Black Beans
Easy, fast, delicious, economical, healthy and nutritious, kids ate it. I couldn't ask for more in a recipe. I did add a 14.5oz can of undrained diced tomatoes in at the end and simmered for 5 minutes. Sprinkled with cheddar once served. Next time I'll double the recipe as this made enough for 2 adults and 2 kids for one dinner, and I want leftovers next time!
