That Addicting Salad
I have been using this recipe for years, but I keep the ingredients in separate containers in the fridge, and use them for individual dinner salads. That way I can enjoy this salad, even when I'm dining alone, but do not have to make up a big bowl of salad. This recipe can be modified to be low carb.

Chicken Spectacular
I have made this for years, but never thought of using mayo, but it did add something extra. I use the Uncle Ben's long-grain and wild rice mix, as recommended in another post. Instead of the chicken I used crisp bacon, although either or both together would work well. I use toasted almond slivers instead of the water chestnuts, and prefer the frozen French-style green beans over the canned. I am not intending to change this wonderful recipe. It is just something I put together years ago and was surprised to see it on here. I guess great minds think alike.

Real Wisconsin Fried Cheese Curds
We love cheese here in Wisconsin and cheese curds, especially. I am on a low-carb diet and am missing my snacks, but this recipe saved the day - these are the REAL DEAL, YUM!! To go low carb, I substituted canola oil for vegetable and coconut flour for all-purpose flour and they still tasted great. Thanks, Mark
