Chewy Coconut Cookies

Reviewed: Jul. 21, 2003
Easy and very yummy. Once you try these out, you'll always keep coconut on hand! I didn't have any brown sugar, so I just used white, and they turned out fine. They flatten fairly thin once cooled and are nice and chewy.

Chocolate Waffles I

Reviewed: May 17, 2003
AWESOME!! This is a wonderful weekend treat. They were very moist. They texture is more like a pancake, not crispy on the outside. I also noticed I had to use slightly less batter on the iron than I normally would, or they overflowed. Great with strawberries and whipped cream. :)

Honey Oatmeal Bread I

Reviewed: May 14, 2003
I'm sure it's better than it turned out for me. I cheated and used all whole wheat flour. I made it into rolls, which were very dense, didn't rise and taste a lot more bland than I like. Would probably be good as a really wholesome breakfast roll with some honey.

Asian Salmon

Reviewed: May 12, 2003
Great flavor combination. I was desperate for a salmon recipe that had some strong flavors, as some of the family aren't really crazy about salmon. I didn't follow the recipe exactly, but the sweet and sour flavor was really yummy.

English Trifle

Reviewed: May 8, 2003
Great recipe. I wanted a trifle recipe for an anniversary party and this one really fit the bill. I did pour brandy over the cake to make it really special. Yum. I also left out the banana's because I forgot to buy them. Very easy to make, and the end result is very pretty.

Awesome Chicken Noodle Soup

Reviewed: May 3, 2003
This was exactly what I was looking for. Easy, basic and yummy. I let my chicken simmer overnight in the crockpot, it just fell off the bones. I didn't have any lemongrass, but it was still awesome, and you could easily play around with seasonings. Thanks for a great recipe.

Excellent and Healthy Cornbread

Reviewed: Apr. 27, 2003
So Good! We prefer our cornbread spicy as opposed to sweet. I cut back on the sugar slightly, added a 1/2 cup kernel corn and a heaping Tbsp. crushed chili's. It has a slightly tangy taste from the yogurt that gives it some pep.

Garlic Pita Bread Bites

Reviewed: Apr. 25, 2003
Very easy. I usually just cut up pita bread to serve with dips, but this was way yummier, looked nicer and holds the dips better. I didn't have parmesan cheese and they still taste great.

Field Salad

Reviewed: Apr. 25, 2003
Mmmmmm. I didn't have everything on hand, but it inspired me. I used toasted almonds and sundried tomato dressing. It was a huge hit and looked so elegant. I'm going to experiment with various cheese, nut, fruit combinations.

Jo's Rosemary Bread

Reviewed: Apr. 24, 2003
Great bread recipe. I doubled the herbs and added 1 Tbsp.crushed chili's for some extra kick, very flavorful. I make mine in the oven, brushed with olive oil and sprinkled with coarse salt and more herbs. Makes for a nice presentation.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

Reviewed: Apr. 20, 2003
YUM. I forgot to add the pepper, which was probably a good idea. I was in a hurry to dress up a ton of carrots and brussel sprouts. This was perfect. I threw mine in the oven for about a 1/2 hour on warm as we were preparing other things, which made the sauce more of a glaze. Not too sweet.

Basic British Scones

Reviewed: Apr. 19, 2003
The perfect companion to a cup of tea! Very easy. I made them exactly as directed, and they turned out perfectly. I almost added more milk, as the dough looked very dry, but after kneading it for a moment, it was just right.

Best Brownies

Reviewed: Apr. 15, 2003
They really are the best brownies. Super easy, simple ingredients, and turned out great. Dense and chewy. I only baked mine for 25 minutes and might actually go a few minutes less next time. I used white icing to frost them, they were a big hit.

Waffles I

Reviewed: Apr. 9, 2003
Great recipe. The waffles are fluffy and delicous. I used equal parts evaporated milk and water instead of the milk, as I was out, and they turned out great.

Excellent coffee cake. Not too sweet. The batter rises quite a bit during baking, making it nice and light.

Dill Vinaigrette

Reviewed: Feb. 24, 2003
Great dressing. It was very easy. I would use a little less sugar next time, but I guess it depends what is in the salad. I agree with the reviewer who said this would make a great marinade.

I don't know if I'd say they're "melt in your mouth" but it was a good basic shortbread recipe that I'll use again.

Best Ever Muffins

Excellent. You could do almost anything with this recipe as a starter. I made 2 batches, one with 1 cup chocolate chips, kids loved them, and the other with a well drained tin of crabmeat and 2 Tbs. chopped red pepper. They were awesome!
