My greatest cooking triumph was discovering how much better breaded fish and chicken are when you add white wine to the egg you are dipping them in!

Brooklyn Girl's Penne Arrabiata
I love this recipe, but I did make a few slight changes. I cut the chicken in strips and flour them. I sautee them in the pan with butter and olive oil. Then I remove them from the pan, add a little white wine to deglaze and then some chopped pancetta for added flavor. Delicious!

Vicki's Hush Puppies
This was my first time making hush puppies. I remember them as a child and how yummy they were. I have never found them as tasty in restaurants and many don't carry them. I thought I'd give this recipe a try. They were okay. I made a double batch so I added 3 eggs and 3/4 cup of whole milk. Definitely need the liquid. I added the onions, but next time, I will keep them out and sprinkle powdered sugar on top when they are done. I may also melt some butter and include that as part of the liquid. I do think this is a good base recipe, but it needs some work and definitely more liquid than 2 eggs.

Beef and Bean Chimichangas
I made this recipe using ground bison meat and multigrain tortillas. If you didn't want to go the meat route, these can easily be made veggie by just chopping up more vegetables and adding spinach. I shredded fresh colby jack and cheddar cheese. It was super yummy! Everyone raved about these. Definitely a keeper recipe.
