Cornbread Muffins I

Made this gluten free! I did not add the corn. I used sweet rice flour, gluten free corn meal and 1/2 tsp of xantham gum (since it is gluten free) and a ratio of 2:1 cream of tartar to baking soda for gluten free baking powder. I thought I was out of gluten free cornbread mix until I was halfway through mixing this recipe up. Turns out this is way better then the mix!

Baked Tilapia

This is a definite DO OVER! I do think that the olive oil could be cut in half or at least to 2/3. We paired it with sweet potato baked in the microwave and then cut into pieces and pan fried with olive oil. The sweet flavor paired well with the Tilapia and soaked up the juices. We rounded out the healthy meal with sliced cucumbe with seasoned rice vinegar dressing-Excellent!!!

Marinated Grilled Shrimp

Our whole family loved this recipe! We cooked it on the barbecue using a fish hoder. It took a little longer then 3 min. per side,but it was marvelous!

Linguine with White Clam Sauce II

This recipe was a bit bland as is. But we added some pesto sauce and coarse ground black pepper to jazz it up. The pesto sauce did not overpower the delicate flavors. It was a hit with our family.

Fresh Cranberry Relish

Next time, I too will use only one apple, and also one can of mandarins. I will also use the sliced and not crushed pineapple. Make sure to drain all fruits as much as possible. I will also chop the fruit next time, and add the addition of some nuts, and more brown sugar to taste. I added some red food coloring to make it look more like cranberry relish.

White Barbecue Sauce

This was really good stuff! It is very simple. My ten year old wasn't going to try any, because he thought it looked weird. But I grilled pork chops, and it was quite tasty. I figured he would like it, because he likes sweet and sour. It just sounded strange. I may substitute olive oil for the mayonnaise next time to make it a little healthier.

Korean BBQ Chicken Marinade

This marinade is great! I used in on boneless skinless chicken thighs on our barbecue. I have been trying to find a similar recipe to the "meat sticks" he had at a Filipino Birthday party. thumbs up! The trick is to marinate it overnight.

Broccoli Salad I

I like this version with sunflower seeds instead of nuts, and green onions instead of yellow onion. The onion can sometimes be overpowering with yellow onion, and the sunflower seeds are much less work!
