My favorite things to cook
Chunky Chili: A recipe originally from Cooking Lite Magazine, which I have changed over the years to add more fresh vegetables. A Family Favorite.
My favorite family cooking traditions
Making Homemade Truffles: I took a class with my mom years ago. My truffles are not wasted on my youngest son. He says mine are better then the store bought ones!
My cooking triumphs

Cornbread Muffins I
Made this gluten free! I did not add the corn. I used sweet rice flour, gluten free corn meal and 1/2 tsp of xantham gum (since it is gluten free) and a ratio of 2:1 cream of tartar to baking soda for gluten free baking powder. I thought I was out of gluten free cornbread mix until I was halfway through mixing this recipe up. Turns out this is way better then the mix!

Baked Tilapia
This is a definite DO OVER! I do think that the olive oil could be cut in half or at least to 2/3. We paired it with sweet potato baked in the microwave and then cut into pieces and pan fried with olive oil. The sweet flavor paired well with the Tilapia and soaked up the juices. We rounded out the healthy meal with sliced cucumbe with seasoned rice vinegar dressing-Excellent!!!
