Chuck's Favorite Mac and Cheese

I made this for a couple friends the other night. After a few bites of this, one friend looks at the other and asks "have you ever had better homemade mac n' cheese? I know I haven't!" I will make this over and over. It's sooo delicious and super easy!!

White Chocolate Macadamia Nut Cookies IV

I bake cookies for my fellow poker players every week, and I served these little tasty treats up at last night's game. HOLY --I've never had such praise! I'm afraid I won't be able to outdo those!! Great, easy recipe. Make these!

Mexican Bean Salad

I cut back a little on the oil, and I added one chopped avocado. It was absolutely delicious! A huge hit at the cookout I attended last night - in fact, I should've brought copies of the recipe with me! I will certainly make this again.

Green Tea Layer Cake

I made this cake yesterday for an Asian-themed dinner party, and had rave reviews. The one thing that confused me was when I printed the recipe in the 4x6 print format, the milk quantity didn't print (strange). Luckily, I winged it and added just enough to make the frosting. I used soy milk also, it worked great. Another thing I did was add coconut. Maybe this turns this into a different type of cake, but a half cup (or however much you like) of toasted coconut (bake in 350 degrees until lightly browned) sprinkled on top and refrigerated was excellent. I served with a dollop of vanilla ice cream. Also, I found machta green tea powder at Whole Foods (after a long search). They came in a small box of individual packets that you are supposed to pour in a water bottle. A little pricey (I used two boxes at $7.99/ea), but well worth it as far as I'm concerned for trying something new.

Pad Thai

I LOVE this recipe! I've made it a couple times before for friends, and when we decided to have weekly dinner parties, everyone demanded I make this for my turn. Only a few variations....I did double the sauce (vingear, fish sauce, sugar) and cut back a little on the red pepper. The first time I made it according to the ingredients, it was a little too hot for some sensitive palates. Maybe I've kept the final product too long on the stove before serving, but the more sauce the better as far as I'm concerned :) I also added shrimp that I've marinated and cooked in an Asian Sesame dressing/marinade. To serve, I had Thai peanut sauce on the table that is delcious with it (especially if you like theat spicy peanut combo). Also, I prefer limes instead of lemons. Overall, I imagine I will be making this over and over again.

Delish! I served this at a small dinner party last night and had rave reviews. The only thing I would do different next time would be to cut down the red pepper even more (and I used only half when I made it!). I don't mind the spice, but it was hot. I also used lite coconut milk, so maybe that didn't "cut" the heat. To give it a little more consistency, I'll probably throw in some shitake mushrooms as well. Overall, I really liked it and will make it again.

Tabbouleh I

This was excellent and so easy! I added two more tomatoes since I live by the theory, 'the more tomatoes, the merrier'. It turned out so merry, I thought it was Christmas in my kitchen :) Thanks so much for such a great tabbouleh recipe.

Mostaccioli with Spinach and Feta

I added artickoke hearts and red peppers to the mix - it was very good. The tomatoes seemed to get a little too done, so I would add the tomatoes seperately from the rest of the mix until the spinach is about done wilting. I might use canned diced flavored tomatoes next time.

Beef Enchiladas II

I doctored this up just a bit and it was awesome.... I added 1 small chopped green bell pepper, 1/4 cup worcestershire sauce, salt and pepper to the beef mix. I also added some taco sauce to the enchilada sauce. I love flavor, and can't get enough!! Also, I often find that cheese can come out dry and rubbery when baked on top, so I baked the dish for 15 minutes, then put the cheese on top and baked for the additional 5 minutes. Delicious!

American Shepherd's Pie

Delicious! I added some freshly chopped carrots, green bell peppers. I also used a few splashes of worcestershire sauce and salt & pepper (for extra flavour) to the beef mix. I also used 4 cups mashed potatoes instead of 3. Turned out to be a huge hit. Thanks for the great recipe -- I'll definitely be making this again!

Better Than Sex Cake I

Chicken or Turkey Tetrazzini Deluxe

This was delicious! I made just a couple of changes. Instead of frozen peas, I substituted a package of frozen mixed vegetables to give it even more flavor (and color!). I also added some yellow and red bell peppers with the green. I took the advice of others and cut out the water and cooked the linguini al dente - it worked out very well. I also sprinkled shredded cheddar cheese on top with the parmesan. It made a very nice topping after it was baked. Also, be sure to use a very large pot when mixing it all up - a lot goes into this casserole! Cheers!!

Artichoke Spinach Lasagna

This is one of my favorite dishes, and I don't like traditional lasagna all that much. It came out a little soupy the first time i made it, so i only used about 3/4 can of the vegetable broth next time. Chicken broth also works well - for those non-vegetarians out there. Thanks for the great recipe!

Ibby's Grasshopper Pie

My boyfriend hates most desserts (yeah, he's nuts!), but he absolutely loved this one. It just mets in your mouth and it definitely has a kick from the creme de menthe. The only problem I had was finding chocolate wafers at my grocery store - so I used oreos, sans the creme. It was delicious!
