Grandma's Lemon Meringue Pie
My Young Son and I made this recipe as tarts today. 1/2 the recipe and lime instead of lemon.. Wow they are good! Because limes are usually smaller than lemons we used 3 instead of 2 for 1/2 the recipe... for both the zest and the juice.

Absolutely the Best Chocolate Chip Cookies
Only giving you 4 stars for the use of butter flavored shortening. Was not aware that something so silly even existed. I doubled the recipe and used 1 cup REAL butter, and 1 cup coconut oil. I would have to say this is the only recipe that makes it into my bookmarks for chocolate chip cookies.

Best Big, Fat, Chewy Chocolate Chip Cookie
These Cookies are fantastic. Not sure what everyone is talking about re a flat cookie. They definitely flatten as they bake but don't all cookies? I didn't bother with the chilling pre baking. But I do really blend the butter sugar mixture for quite some time to get the sugars to break down and smooth out. I also blend for a good amount of time when the eggs are added. Maybe this helps with keeping their form. I also use Dark brown sugar which I believe adds more depth to the overall flavour. My only concern is that maybe there are TOO many chocolate chips! LOL. Sometimes I add ground walnuts for flavour as well. My kids don't like the texture of nuts in their cookies, so this is a good compromise.
