Broccoli, Leek, and Potato Soup

FULL OF FLAVOR! The 1 tbsp of pepper was just enough spicey- loved it! Instead of bacon I put in a tbsp of bacon grease that I always keep on hand and also added one large sweet potato too. I only had turkey broth so used that. Also just had about 1 1/2 cups of 1/2 n 1/2 instead of milk. Turned out FANTASTIC! Everyone loved it. Thanks!

Banana Sour Cream Bread

I made this with only maybe 1/2 cup brown sugar and whole wheat bread flour, 2 extra bananas and it turned out fabulous! moist and not dense and more naturally sweetened. Lovely recipe!

Cocoa Quickies

Easy and tasty! I modified a little and used coconut oil instead of butter, 2 cups of Bob's Red Mill Natural granola and 1 cup oats. The sweetness in the granola led to only adding 3/4 c brown sugar (instead of white). Also the granola adds a crunch to it all. Finally, I added 1 lidfull of vanilla- turned out great! Thanks!

Carrot Chile and Cilantro Soup

This is now a staple soup in my family. I do a few things differently, partly because of what's on hand and partly because of preference. I use coconut oil instead of Olive oil, Chili sauce with garlic that you can find in the Asian section of major super markets, and fresh grated ginger---YUM!!! I only blend half of it to enjoy the texture of the carrots and potatoes. WE LOVE THIS SOUP!!

Heirloom Tomato Salad with Pearl Couscous

I love this recipe! I make a bigger batch so I toasted 2 cups of the pearl couscous and added 2 1/4 cups of broth, covered it and simmered on low for 10min. No liquid was left and the couscous was perfect. No need to add too much extra of all the other ingredients, just test it and add accordingly. I also like to add 1/4 cup sun-dried tomatoes along with fresh ones- makes it doubly good!

'I Hate Cucumbers!' Cucumber Salad

What a fabulous taste! Split the vineager with Apple Cider vineager and put in a little less, added a little extra mayo and sugar and extra fresh dill. I definitely like it with celery- gives it that extra crunchiness and flavor. This one is going in my 'favs'!

Marinara Sauce II

Made this tonight and it was great on baked eggplant parmesan! Instead of crushed tomatoes I used tomato sauce and added extra garlic. Good stuff!
