Mango Bruschetta

EXCELLENT!! I tried this recipe because it sounded refreshing. I added plum tomatoes and red onion with a little salt and pepper and it was awesome! My guests were raving about it and were surprised at how the flavors all melded together. I used the romano cheese and thought this had a great compliment to it. I see that others have suggested other cheeses so that may be something to try later. I would recommend this recipe if you are looking for something a bit different, but be sure to add the extra ingredients that really make it a great recipe. Thanks to other reviewers for the suggestions!

Cheesy Thumbprint Appetizers with Hot Pepper Jelly

I was looking for an appetizer that didn't need to stay warm and was a little unique. This was definitely it! I took the advice of those who added some additional spices (garlic powder, salt, and paprika). This is a quick recipe and the final product looks very attractive. I also had to bake them for about 2-3 mins longer. The only pepper jelly that I found at the grocery store was an amber color. When I first opened the jar, I was a bit nervous that it wouldn't look appetizing, but since the cracker is golden, the amber colored jelly looked "sparkly". I would absolutely recommend this appetizer and have shared the recipe with several friends. Next time I may try the suggestion of the brown spicy mustard and hot sauce. Yes, there will definitely be a next time!

Mom's Sweet Potato Bake

I made this one other time and it was very sweet, so this year I was looking for a recipe and saw this one again and paid more attention to the reviews and suggestions, so I tried it again. However, in the craziness of getting all food items ready for the holiday, I didn't get this dish ready in time to put in the oven for the full time. So instead, I quickly prepared it using only 1/4 cup of white sugar and put in the microwave for 10 mins on high. I then put the topping on it (added some cinnamon to the topping) and put in the oven for about 15 mins while carving the turkey and getting other items to the table. It was excellent!! Just the right amount of sweetness with the reduction in sugar.

Grape and Avocado Salsa

Was looking for an avocado/guacamole recipe that was a bit different, but simple, and came across this one. It is EXCELLENT!! I wasn't sure I'd like the flavor but the sweetness of the grapes combined with the avocado and lime juice and the other flavors is wonderful. I gave the recipe to a friend who made it all summer! I will be making this recipe several more times.

Carib Black Bean Soup

This soup was awesome! I used the dry beans. I also read the other reviews and only pureed half of the mixture and left half of the beans in the soup and also eliminated the two cups of water. I like having some beans in the soup rather than it being all liquid. I made it for a tailgate party and everyone loved it. It has a little kick to it, which was the perfect amount of spice. This is definitely a keeper.
