Tamale Pie Casserole

This is a good 'idea' recipe. I didn't bother following the recipe as written, but It did inspire a close second. It also helped that the cornmeal box had a different recipe on it. First change (batter): I did a 3:1 ratio (instead of 6:1) on the cornmeal and water. I also substituted 30% of the water with evaporated milk. I then precooked the bottom crust by spreading the batter in a buttered/oiled dish and cook at 425 for at least 15 minutes in a pre-heated oven. It keeps it from getting soggy! Second change (filling): For the filling I sauteed in oil not shortening. I used diced beef, diced tomatoes, onion, garlic, cayenne, cumin, seasoned salt, corn kernels, and diced green chilis. I cooked the beef and onions first, added the other ingredients, and let that simmer for at least 20 minutes. This idea is to tenderize the beef, mingle the flavors, and reduce some of the liquid before baking. Third Change (layer and cook): I added an extra layer of drained cooked beans. (Canned works fine) on top of the meat mixture. Pour and spread the top crust. Cook uncovered for 30-40 minutes on 425 degrees (not 350) sprinkle cheese on top. Cook for ten minutes more. Three stars because this recipe needs work, but is a good base.

Great texture!! No flavor AT ALL!! I added 2TBL of seasoned salt to eat. (I used the original reciped that called for kethcup)

Mexican Lasagna I

Make sure you get some sour cream mixture on your fork or else it taste like beef/bean/pasta mush.. The dairy on top made all the difference. Definitely think the filling needs more flavor.. I used A cup less water.. I think that was a good move. also I think this at least an 8 serving recipe.. not 6!

Apple Style Omelets

The egg part of the omelet is very "Bready" because of the heavy cream. Didnt like its consistency. Kinda bland flavor because the apples aren't prepared to be sweet. I've had apple omelets before and the apples were sweeter, I believe they were almost carmelized and THAT was divine. Good recipe if you prefer an apple omelet that does not tase like apples or omelets

Enchiladas

I love this recipe! You read it and you think... Whaaaaat? Cream of chicken soup? But trust me it turns out good. Warm the tortillas first to prevent cracking. There WILL be leftovers. Make sure you put sauce in the inside and cover the tortilla on the outside.. Otherwise they will be dry. Serve with SALSA because this recipe is not the least bit spicy (In my opinion) It is definitely amercanized.. but its still good.

Pink Sauce Beef Tips

Great taste.. Great way to get rid of some left over Masala wine . (That stuff is nasty) It wasn't pink though! It says its pink! THAT was dissapointing because my 4 year old loves everything pink.. and I did it to treat her. Nothing spectactular.. just a complicated variation of spaghetti.

Scottish Shepherd's Pie

Kinda sweet but good.. Kids should love it. Very easy. Lose a star because it is watery, (Even when you hand mash the potatoes)and boring. It seems like it is missing something...more veggies.. and a crust of some sort (perhaps biscuit)... I guess that's the difference between Scottish and regular shephards pie? Otherwise great way to get rid of leftover Holiday Ham

Spicy Black Bean Soup

Spicy?I wouldn't quite call it that... Delicious and easy yes! i had it with tortilla chips and monterey jack cheese. My four year old didnt call it dirty... she cleaned the bowl... If you are expecting spicy however add more pepper.. Otherwise good recipe.. lose a star for making me think it would be spicy....Kudos for not needing to soak the beans overnight

Hearty Turkey Soup with Parsley Dumplings

Time consuming but worth it! Dumplings are the gummy kind.(If you are used to Bisquick like I am) I did not have fresh parsley so I substituted for the dried type but it was still good. Don;t know if it lives up to the name hearty.. but then again I left out the rutabaga...Maybe some potatoes in it... That would make it hearty. I had two bowls and I'm still hungry

Applesauce French Toast

This is soooo good and easy to make. The first time I made french toast as a child, i ended up with fried toast with eggs on it. Because this recipe does not use alot of eggs, that wont be a problem on this one. Yes, the french toast is very soft, I reduced my milk a little, as suggested by other reviewers.. I also used cinnamon bread (and reduced the cinnamon) and chunky applesauce.. because most of the applesauce was left in the bowl (the chunks) the french toast came out not too sweet... and I fried it in butter...

My Mom's Best Bread Pudding

custard style bread pudding. Not bad. BUT there are less complicated ways to make bread pudding and there are other versions. AND i don't particularily like the "hard sauce" Its very nutmeggy.... the overall bread pudding wasn't very sweet either.. If you dont already LOVE bread pudding I wouldn't suggest it
