I'm currently a full-time student, lucky enough to quit working while attending classes. In my free time I've made cooking a huge hobby of mine. I like knowing what's going in my food and how to get the most flavor out of very healthy dishes. It's also really great to have a boyfriend who will grin and bear anything that I put in front of him. :)
My favorite things to cook
Right now the recipe that I feel I've really "gotten down" to a T would be white chicken chili. I love it! I'm always looking for new and interesting recipes to try and tweak to my liking. I love cooking desserts!
My favorite family cooking traditions
My grandma made up a Milky Way cake recipe all from scratch and it's been passed down through the generations. If it came down to one tradition that I love, it's taking things from scratch and creating something that others are astounded by.
My cooking triumphs
It's always a triumph when my friends, family, and boyfriend can't stop complimenting what I've made for them. Ultimately I enjoy making things that they love and wants seconds of!
My cooking tragedies
I once completely screwed up some fried catfish. Though I don't think it was entirely my fault (because it was the first time I'd ever had store bought/farm catfish as opposed to wild catfish that I had caught)... I was still extremely disappointed in the whole thing. Breading wasn't right, fish was fatty. I threw it all out. Still trying to figure out what to do with the other pound in my freezer. :-p

Old Fashioned Peach Cobbler
I didn't feel like making a crust so I used a pie crust and cut the portion size down to 8. Baked the bottom pie crust in the oven for 20 minutes to reduce the chances of it turning out soggy. While baking the bottom pie crust, I mixed together the ingredients. I had a couple cans of peaches on hand and used those. (Lite Del Monte peaches). Turned out DELICIOUS! Served with butter pecan ice cream for a little different taste.

Roast Sticky Chicken-Rotisserie Style
Turns out great every time and is a great way for me to have cooked chicken on hand for the rest of week's dinners!
