Millet Delight

This wasn't a "knock your socks off" recipe for me but I still gave it 5 stars because it's simple, creative, healthy, and delicious! I don't use soy so heated up 4 cups of coconut milk with 1 1/2 cups of water and used that instead. Other than that I made the recipe as directed. I can't wait to try it again with the addition of some cinnamon or pumpkin pie spice....possibly a rum extract instead of vanilla. I read another review that included dried fruit such as blueberries....that sounds delicious to me and I'll probably try that as well! Thank you for giving us a delicious recipe that uses a very healthy underused grain!

Bacon-Wrapped Grilled Elk Backstrap

This recipe was really good! It had delicious flavor and was fairly easy to prepare. My only complaint with it is that you have to be pretty good about cutting every piece of meat the same size. Our pieces were all similar in size but not exactly the same and the smaller pieces ended up being too tough because we had to cook it long enough for the bacon to fully cook. I'll try it again but next time I'll try to be very careful about making everything the same size.

Onion Elk Roast Stroganoff

If I could give this recipe more than 5 stars I would! It's incredible! I haven't been able to find cream of onion soup but I've made it with cream of celery and cream of mushroom and it has been amazing either way! I also add about 1 lb of mushrooms and cut the water down to 1/2 cup to make up for the water the mushrooms add. I usually serve it over egg noodles and it always gets rave reviews and my guests always go back for seconds and thirds! Thank you for this deliciously easy recipe!!! It's a favorite in my house!

Roasted Spicy Garbanzo Beans

I agree with most of the other reviewers......cook them until they're crunchy and eat them as a snack. I tried them first exactly as the recipe suggests and they were okay. I tried cooking them for longer and found that the oven was too hot at 350 and the beans started to pop and burn. I tried them again except I added a little extra seasoning and then I lowered the temp to 250 and cooked them for a little over an hour......fantastic! This is the only way I make these now! Flavorful, filling, healthy, crunchy and satisfying!

Sean's Mommy's Roasted Root Vegetables

Simple recipe but very tasty and easy! I always add onions and I usually add about 1-2 Tbs of balsamic vinegar (flavored or regular) and it really adds a unique depth of flavor that goes very well with the veggies! It's also delicious with the addition of herbs like rosemary or italian seasonings. This is a staple for us in our household during fall and winter!

Vegan Agave Cornbread Muffins

These were delicious! I substituted coconut milk for soy milk and olive oil for the canola but other than that I followed the recipe exactly as written and they turned out wonderful. One of the best cornbreads I've had and probably the healthiest!

Amish Breakfast Casserole

This recipe is amazing! I've made it several times and I've made several different combinations....although the original recipe is fantastic as is! I usually end up adding 1 1/2 lbs. of meat (any combination of bacon and/or sausage) and I usually add extra cheese....but I love cheese! I usually grate fresh potatoes instead of using frozen but I've made it both ways and it comes out great either way. I also add a bit of salt and fresh ground pepper. These freeze very well and I love having a pan of it sitting in the freezer in case I feel like having comfort food for breakfast or if I want to impress company without spending all morning cooking. It always gets rave reviews!

Asian Sugar Snap Pea Appetizer

Delicious recipe! I like my food to have quite a bit of flavor so I did as another reviewer suggested and mixed the sauce and the peas together first and then cooked everything together. They came out delicious and were devoured in minutes!

Simple Chicken Brine

Cheap! Easy! Delicious! I substituted Bragg's liquid aminios for the soy sauce and then I added the juice and rind from 1 lemon. Brined a 5 lb chicken for 2 hours and then stuffed the cavity with onions and baked it. The meat was perfectly seasoned and super tender! I think this recipe is a great base recipe and I'm excited about trying other variations....adding herbs, roasted or raw garlic, other citrus, etc. Thank you for the wonderful recipe!

Simple Macaroni Salad

This recipe is delicious! I like the blend of flavors and it was super easy to make. I added 2/3c. sour cream as other reviewers suggested and I also added a large grated carrot and about 1 cup of peas. I tried it right after I had finished mixing everything and I was wonderfully surprised at how fantastic it was! The recipe suggests refrigerating it for a few hours before serving and I was excited to see how all the flavors would end up setting up. A few hours later I dished it up for dinner and my boyfriend and I both agreed that it had gotten a bit on the dry side and more bland while it had been chilling. I'll definitely make this again but this time I'll serve it up just after I finish making it. If I have to make it ahead of time then I think I might try doubling the mayo and sour cream and adding another packet of soup mix.

Picnic Potato Salad with No Mayonnaise

My basil plants are huge so I was looking for new recipes when I stumbled upon this one. I just made it tonight and I was not disappointed! All the flavors blend beautifully and it was incredibly easy to make! I made the recipe exactly as directed but I'm excited to play with it next time. Garlic salt instead of regular, flavored balsamics, flavored olive oils......the list of combinations is endless! Thank you for sharing such a wonderful recipe!
