Old-Fashioned Rice Pudding

This was very easy to make, and required no special ingredients. Very convenient way to use leftover rice! I have a recipe using uncooked rice that includes butter, eggs, etc., but this recipe is better for someone trying to lose weight. I cut back on the sugar by about 1/4, and used 1% milk and it is a motivating treat for me if I manage to stay within my calorie allocation for the day! Best of all . . . my teenager doesn't think rice and sweet go together so she doesn't gobble it up!!

Mom's Zucchini Bread

Scrumptious zucchini bread. I substituted one cup of the white flour for whole wheat, and used a sugar substitute to cut the calories down to about 174/slice. The bread is moist as others have commented, so even when it is a day or two old, it's still delicious and not dried out. I'm making more today to use up some of our zucchini, and I plan on freezing several loaves.

Vegetarian Chickpea Sandwich Filling

This salad is delicious. I prepared it for my boss who was joining my coworkers and I at a British tea room (in the Midwest) for lunch. He cannot eat gluten and the restaurant couldn't accommodate his dietary needs, so each of us prepared something for him and we carried it in with the proprietor's permission, of course. It was a hit with my boss. I trimmed some Napa cabbage leaves and put some of the mixture in each, folded the sides up around the mixture, put a slice of cucumber and a slice of red bell pepper on top and secured it all with special toothpicks. I was very happy with the results! My husband and I had the leftovers for dinner tonight and he declared it delicious, too. Seems very versatile as far as adding things you like and leaving out those you might not. Very customizable recipe.

Apple Pecan Cobbler

Marvelously delicious cobbler. Like another poster, I doubled the recipe, cooked it an additional ten minutes in a 13x9 dish, and it was perfect. I reduced the total sugar by about 1/2 cup, and I'll reduce it a little more next time. I like to taste the tartness of the apples. The pecans (my favorite nut!) add a delightful crunch to the cobbler, too. If you like a lot of cinnamon, you might add more than the recipe calls for, but I found the amount in the recipe perfect as I don't like the cinnamon to overpower the flavor of the apples. I will be making this again tonight to bring in to my coworkers tomorrow. It's delicious!

Cranberry Scones

Tried this recipe yesterday, and I'm making another batch today! They are really delicious. Yes, the dough is a bit sticky, but the finished product is slightly moist, not like some scones that are almost too dry to swallow. I avoided actually adding more flour to the mixture, but I did dip my fingers in flour before trying to pat each half of the dough into a flat circle. That seemed to work fine as far as making the dough a little easier to work with.

Pretzel Turtles

I just made these treats for my daughter's graduation party, and they are fantastic! Very easy to make, and spectacularly delicious. I used Dove brand chocolate covered caramels to add richness to the flavor. Now to keep the family out of them until the party tomorrow.

Zucchini Pancakes

My friend and I went out to a Turkish restaurant and we had zucchini pancakes for the first time. I decided to try my hand at them tonight and used this recipe, but left out the sugar, and added about 1/2 of a good sized onion, grated, and a teaspoon or so of dill weed. I mixed a couple cloves of minced garlic, and 1/4 teaspoon or so of dill weed to a half a cup of plain Greek yogurt (Fage is my favorite) for a dip. They were delicious!! I'll definitely be making them again.
