Slow Cooker Beef Stew I

super easy and very yummy! I just threwin the stew meat totally frozen, forget dredging in flour too. Added 1/2 cup red wine. No potatoes. Added some rosemary. Added corn flour to thicken when I got home and served over brown rice- a great South Beach phase two recipe!!!

Dump Cake V

I had to improvise and used a can of fruit cocktail and just took out the grapes...otherwise used the variety in the case and the juice. Turned out great!

Creamy Chicken Peanut Soup

This truly was the best peanut soup I have ever had...I chopped up the celery and a red onion in my food processor. I also added about one fourth of a green pepper for some added flavor. I did not have heavy cream so I mixed up some milk and instant coffee cream, and that did the trick. So easy and quick and flavorful. Virginia is known for its peanuts and peanut soup is a big thing.....and this is better than the traditional peanut soup in southeastern Virginia's restaurants. Garnish it with some chopped peanuts. De-lish. Served with peanut chicken sald croissants. (Im adding that recipe to the site soon). Thank you:)

Coconut Shrimp I

Divine. So good. I used heavy cream in place of beer and the batter stuck to the shrimp very well. I also chilled the shrimp (dipped in batter) in the refrig. about an hour. The dipping sauce is perfect. I am making this again today. Thanks!

Beer Roasted Lime Chicken

this was good. I would like a little more lime infused flavor but Im not sure how...I used a bunch of limes. May try and add a little lime concentrate next time also. Easy..I also used fresh cilantro. Thanks.

Three Ingredient Peanut Butter Cookies

This is the only kind of peanut butter cookie I make now! My only variation is I use 1/2 c. brown sugar and then just under 1/2 c. white sugar and a dash of vanilla and salt. yummy.

Vegetarian Sweet and Sour Meatballs

these were very good and a nice alternative to the soy products that I am often stuck with. I too used more Italian seasoning and oregano-no sage. I had enough left over to use with spaghetti later in the week. My husband- a meat and potatoes man liked them and he really liked the sauce! Thank you for this creative and yummy recipe.

Homesteader Cornbread

excellent! No more store bought mix! This is easy and has a wonderful taste and texture! Sweet and delicious! Served with spicy vegetarian chili and now, one week later using the remainder in a cornbread salad. Has a pretty color when done! Company raved about it! I made no changes to this fine recipe. Try it the Tidewater VA way- with a little maple sauce poured on top. Thank you.

Mrs. Fields Cookie Recipe II

These are the first chocolate chip cookies that taste very different from the classic Tollhouse recipe. I cut the recipe in half. I used wheat flour as Im trying to cut down on the white. It definately was the powderized oatmeal that gave them such a great taste. I refrigerated in between batches and scooped each ball with a small ice cream scoop. This will now become my staple cookie recipe. (It was very easy too and didnt take too long-maybe because I did cut it in half.)

Grilled Portobello Mushrooms

fabulous and a new item to add to my vegetarian diet! I followed the recipe except I had no red bell pepper. And after cooking on both sides, I added the rest of the liquid, mixed in with some diced tomatoes and fresh parsley to the gill side. I then topped with a slice of provolone and served on garlic bread. Absolutely divine and cannot wait for my next one. THANK YOU SO MUCH!!!!!

Sweet Potato Casserole II

great! Scaled this recipe to half, Blended three huge potatoes which I had boiled well over an hour in food processor, then combined other ingredients and added them in. Used half the sugar called for and plenty sweet. I had a craving and it was very satisfied. Thanks.

Candy Ice Cream

So, I saw this and had to try it! Background:I went to undergrad at West Virginia University- Go Mountaineers!!!!!!!!!!! and they had their own dairy. At the ice cream shop in the student center they sold York Peppermint Patty Ice Cream. So good. So using nonfat sweetened condensed milk, whipped topping and 1% milk, I made this in a 2 quart container- I added less milk than called for. I also only added 1/2 x. of sugar. I used half of a bag of peppermint patties cut into small pieces. Its wonderful!!! Next time I will use a whole bag and will leave the peppermint patties in big chunks. Very easy without an ice cream maker but I will have my maker set up next time to try this again. Cheaper than buying Breyers and Im sure healthier. Thank you!!!

Italian Taco Salad

Cottage Cheese Chicken Enchiladas

These were very good. I would make a few changes though just because I am no longer carnivorous. First, this made 12 enchiladas. Since its just me and my husband, I froze half of this precooked- as another reviewer suggested. My husband loved his b/c of the chicken. I just used the cheese mixture and the cottage cheese was a little overwhelming without an addition to it. Next time I may simply double the amount of onion/green chilies or add spinach or something just to add more substance to my enchiladas to compliment the cheese. These turn out messy as most Mexican food does but were really very good and had a good kick to them. (I added a bit of the seasoning straight to the cheese mixture also). Thanks and I will make these again!

Cream of Spinach Soup

Qick, easy, and satisfying. I used fresh spinach, some green onions and about 1/4 of a yellow onion. Ran through food processor. Cooked that mixture in the water/chicken bouillion, plus a dash of garlic (minced). In roux, I used 2 1/2 cups of 1% milk plus 1/2 cup of heavy cream. Added a good amount of nutmeg. Once combined I added a dash of lime juice. Served with a dollop of sour cream. Thanks!

Taco in a Bag

So I modified this to serve as a quick adult dinner. Made everything according to directions except instead of serving in the bag, I served in two platic containers with lids, shook well, and we ate right out of the container. Dinner then clean up done lickety-split. Also, I added some zesty ranch dressing. Thanks!!!!
