I subbed more broccoli for cauliflower and I didn't use carrots. The broccoli turned a little yellow after cooking, so I might add them in a little later next time. I also added a tsp of dried thyme and about 1/2 to 1 tsp of dried parsley and orzo. Yum!

Lentil Soup with Lemon

I doubled the batch when i made it, using chicken broth & veggie broth. I also added about 2 cups of diced potato (boiled before adding them to simmer 10 min at the end), and then blended the soup lightly before eating. Yum!

Potato Arugula Salad

So good! I also used lemon juice instead of vinegar, and drizzled the dressing ingredients directly over the potatoes & arugula. I added some goat cheese, which melted a bit and made for a delicious, hearty potato salad.
