Veggie, Almond, and Raisin Quinoa Salad
This is my go-to quinoa salad, which I make often during the summer months. If you can find sheep's milk feta, I would suggest you try it in this salad, it's not as sharp tasting as goat's milk feta, and I find it has a slightly creamier texture. Another variation to this recipe would also be to use half a bunch each of minced fresh cilantro leaves and parsley.

Baked Kale Chips
These are great! As the original poster of this recipe mentioned, I do add spices to my kale. Sometimes it's a curry powder mix, chipotle powder, smoked paprika, or just plain sea salt. I also melt a bit of coconut oil and toss the kale in a bowl with my hands while drizzling some of the oil on top, followed by my spice of choice, then popping the tray in the oven. Yummy! Thanks for the great healthy snack recipe!

Extreme Chocolate Cake
Made this cake last week for a friend's birthday, and yes, it's very moist and delicious. As suggested by others, I added 1 cup of hot coffee (instant vanilla coffee), reduced the sugar to 1.5 cups instead of the 2 cups as per the recipe and used unsalted melted butter instead of the oil. I frosted it with a boiled icing and sprinkled the top and 4 layers (I sliced the cakes horizontally in 2) with toasted coconut and skor bits. Everyone loved this cake - will be making this cake again.
