Chicken Marsala

My BF and I made this last night. He has zero cooking experience. I thought this recipe would show him good basic techniques: preparing the chicken, dredging, pan sauté, deglazing, etc. And then, we shared this wonderful meal! We did add onions in with the mushrooms, extra marsala, removed the breasts while we prepared the sauce. Tiny splash of cream at the end, and dab of butter. Served it with smashed yellow potatoes. My only regret is that it is all gone. We could eat it every day. Absolutely restaurant quality.

The Best Chicken Fried Steak

It's STEAK made in the way one makes FRIED CHICKEN. Hence the name: Chicken-Fried Steak. I hate to see low reviews posted just to ask a question. I realize this is a regional favorite, but it is well-known, and the name says it all. Oh, and it's yummy.

Grandmother's Buttermilk Cornbread

Love it! No adjustments necessary, I've finally found it. Okay, I did use Splenda/sugar mixture, and a squirt of honey. Also, heated my Crisco-d pyrex baking dish in the oven while preheating (and with a T of bacon grease in the pan). Now I'm wondering if I can halve it and just make 6 muffins, since there are only two of us.

Dump Cake I

I, too, have made this for years. Sometimes I leave the pineapple out, and just do a can of pie filling, sometimes I add a little bit of pineapple. I use an 8x8 square pan, and small box (9 oz) of the yellow cake mix. (There is only 2 of us, and it lasts for days.) I use a little less than one stick of butter, and grate it into the cake mix, tossing them together. I usually throw a small handful of brown sugar in with the cake mix and butter. Then just sprinkle it all over the top, DON'T mix it with the fruit. Yum!

Steak Tip Marinade

Wonderful! Had a dozen people over for a party, marinated ribeyes (only about 4 hours) and grilled. I doctor everything, but this didn't need it! (I did use garlic powder and fresh ground pepper in lieu of "garlic pepper seasoning") Everybody raved!

Grandma Johnson's Scones

Found this recipe on Monday, made them that evening for a book club brunch on Tuesday. They were great! Half with craisins, half with cinnamon chips. Brushed tops with egg/milk wash, sprinkled w/ cinnamon sugar. Used a very small round cookie cutter, so they were about 2-3 bites each. Made about 40 of them. Cinnamon were the best, the craisins were a little chewy and browned, I would soak them first next time in OJ. Can't wait to make them again. (They do need a little more baking time.)
