Roast Sticky Chicken-Rotisserie Style

AMAZING, although how could it be anything but? I cut the recipe in half and only made one chicken and made it in the crock pot. Prepped it the night before, Ziploc'd it, and then dumped the onion in the bottom of the pot, stuck the chicken in. Set it on low all day and 8 hours later it was fall off the bone DELICIOUS... no fuss and needed no liquid. Got rave reviews from everyone!

Cafeteria Carrot Souffle

I, too, thought this was best as a dessert. I cut the sugar by half and it was awfully sweet. I put it in a 9x13 pan as others suggested. Flavor was good, but reminded me of the sweet potatoes at Thanksgiving.

Quick Chicken Divan

Roasted Garlic Mashed Potatoes

I used red potatoes because I was out of russet, added a heap of sour cream like other posters suggested, and also stirred in some shredded parmesan, asiago, and romano cheese. They were amazing!

Chicken With Mushrooms

Peppermint Meringues

I, too, used 1/2 tsp. of peppermint extract in place of the candy canes and it worked beautifully. I put my kitchen aid mixer on high, and after I added the sugar I walked away for about ten minutes and came back. I let it go a bit longer and they turned out great!

Marinated Baked Pork Chops

I made this with boneless thin pork chops. I flipped and rebasted halfway through. They took about 30 minutes. I also had to add a rack to the baking dish because there was too much juice. I wanted them to be saucy, but not sloshy and wet, if that makes sense. They were perfect!

Bacon, Egg, and Cheese Strata

I eliminated the mustard and added a few spins of fresh, cracked pepper and it was delicious! I halved the recipe, as I was just feeding my parents and it turned out beautifully after 45-50 minutes. They agreed it was a make again. I used the Tuscan bread from Trader Joe's.

Awesome and Easy Creamy Corn Casserole

I made this for Thanksgiving for 28 people. I doubled the recipe into a 9x13 pan and added some black pepper, too. It was a hit! I'd definitely make this again.

Pumpkin Cranberry Bread

The bread itself is good, but I don't like it with the dried cranberries. It'd be better with fresh cranberries. Or, I should have softened them in warm water first.

Chicken Tetrazzini IV

I, like others, used skim instead of heavy cream and added some extra flour. I also used fresh mushrooms and some frozen peas. I also swapped the spaghetti with penne because I was out of spaghetti. It was absolutely delicious!

Addictive Sweet Potato Burritos

Like the others, I added one can of black beans in with the two of kidney. I also omitted the second cup of water because I found the bean filling runny with just one cup of water. They were fantastic!

Mushroom Pork Chops

I baked it, as another user suggested and it was fabulous! I also added a couple of spoonfuls of sour cream for a richer flavor. I used light sour cream and the Healthy Request Cream of Mushroom soup.

Croque-Monsieur

I didn't find it to be gooey in the center at all. I've now made this three times and have found that it's healthier AND got better flavor if you eliminate the mustard and mayo and use part skim swiss cheese. I also used egg whites instead of whole eggs and sprinkled those with some pepper and salt for added flavor. If you use part skim cheese, it is harder to melt, so therefore, it won't be as "gooey" if you aren't a fan of goo. I saved myself tons of calories with a tastier sandwich, in my opinion!

Really GOOD Frosting!!!

It's got a great flavor, but it's slightly lumpy and hardens pretty quickly. The flavor overrides the textural issues, though. Yum!
