Chicken Asparagus Roll-Ups

This was ok. I think a little less Dijon mustard for me next time. I also think I would like my asparagus cooked outside the chicken for full flavor. It gets lost in the chicken and sauce mix. I couldn't taste the cheese at all. I read the reviews first and cut back to 1/2 cup of bread crumbs and that maybe was still a tad much. I'm not saying I disliked this recipe, just need to change it up a bit for personal preferences.

Kettle Corn

Wow! Wonderful! This is very quick and delicious! Never knew it could be so easy to make. I made a large bowl and stored in small serving size baggies for quick snacks!! It doesn't matter if the sugar clumps or browns to much ( but don't burn it) because it tastes that much better!! Very crispy to the bite!!

Marshmallow Popcorn Balls

Wonderful snack! I made no changes to this recipe, only added to it! I mixed a handful of unsalted pretzels and a handful of chopped walnuts over popcorn and then stirred in the melted (unsalted) buttery marshmallow! Formed into serving size balls and stored in zip lock bag for a quick no sodium snack!! Def. will be keeping these on hand for now on!

Best Cream Of Broccoli Soup

Delicious! I was looking for a low sodium recipe and this is it! The only thing different was I added half of a carrot to the onions, celery and broccoli as it cooked. Used 1/2 cup 2% milk and 1/4 cup half and half cream, and added 1 cup mild cheddar cheese at the end. I wanted to leave a few chucks of broccoli but puréed a little to long. Oh well, next time, but this is defiantly a "make again" soup!! I added homemade croutons on top when served! Thanks!!

Fried Green Tomatillos

I recently discovered these little jewels in the grocery store so decided to buy a few. Had no clue what to make with them so turned to AR. I found this recipe and read the reviews. I followed the reviews advice using egg, flour and lots of fresh ground pepper. Fried them until golden and served with scrambled eggs and toast for breakfast! Delicious!! Added more to grocery list!!

Best Ever Onion Rings

I love these! I omitted the salt and used a table blend of spices, dipped in flour, batter and then flour again! Deep fried until golden and served with special sauce: mayo, ketchup and horseradish with a dash of cayenne! Delicious! Def. will make again!! Easy.......

Creamy Mushroom Soup

I made this to replace the high sodium can soup used in everyday recipes. I modified it a bit, instead of chicken broth I used organic low sodium vegetable broth, replaced the half and half with non dairy creamer and left out the salt. I allowed it to cool and divided it into 3/4 cup containers to freeze for later use. It is very tasty but I think it could be puréed before I use it for my next recipe.

Marinated Pork Chops

Roquefort Dressing II

This was fantastic! I cannot use salt so modified the salt and celery salt for celery seed and extra pepper! Turned out great!! Love that I can make just enough fresh dressing as needed!

Romantic Chicken with Artichokes and Mushrooms

This was excellent! I did add a couple things. I chopped about half a shallot and 1 clove of garlic and sautéed it with the oil and butter to give the chicken some taste because I am on a sodium restricted diet so could not salt the chicken. I also left out the capers as I am not a fan and used chicken broth instead of the reserved brine. The rest stayed the same. I will defiantly be having this again! So easy to make too!! Oven-Fried Pork Chops

I was looking for a way to make pork chops without the mess of frying them and found this recipe. They were very tender and moist although I did not use the stuffing mix for the breading. It just seemed odd to me so I used Panko Italian bread crumbs instead. I have to say this was a mistake, the breading fell off my chops and did not brown up evenly. Next time I will use the stuffing crumbs and see if that works better or maybe normal bread crumbs. Overall the chops are tasty and I will def. use this recipe again!

Artichoke Chicken

Awesome! My chicken was gone before I even touched the other dinner items.....I made the recipe as stated with two additions, I used marinated artichokes and added mozzarella, about 1/2 cup shredded into the mix. It makes a lot of topping so be sure to have enough chicken or cut back the mayo a little, I only had 3 pieces. When I went to remove it from the pan the topping was sliding off the chicken because I used all the topping, I didn't want to waste any. So even though it did not have the pretty look with the browned cheese on top anymore, the taste was wonderful!! This recipe is keeper!!

Ricotta Gnocchi

It was my first attempt at gnocchi and it was very good, however I was not sure how the dough was suppose to feel as it was very sticky. I separated my batch and added extra flour to one to see the difference and other than they were a little more doughy there wasn't much more. I also added fresh mushrooms to my sauce pan and cooked them with the garlic before adding the tomatoes. I enjoyed this and I have lots of leftovers since I was only cooking for two! Next time I will scale it down a little but there will definately be a next time! Very good recipes!!
