Lemon Butter Cookies
I have been baking cookies for many years, and know some of the "tricks' to fix a dough. These cookies, in my opinion, should have been baked at 375, instead of 350. I baked each batch for over 14 minutes, and they still didn't brown. They tasted doughy, and bland. I tried to add a lemon icing, which only helped a little. I was looking for a light, buttery cookie, and this was not it!

Delicious Ham and Potato Soup
Very good, and easy! I usually don't measure ingredients, so I just added enough potatoes to feed my family, 1/2 a large, thick ham slice, celery, and onions. Covered it all with chicken broth and water, and put in the slow cooker early in the morning. By about 1 p.m., I decided to thicken the soup with the white sauce (roux and milk). I felt it wasn't thick enough, so added another roux (no milk this time), about 2 cups shredded cheese, additional onions, sauteed with bacon, then used the bacon grease to make a little more roux. After adding green onions, a few instant potato flakes, and about 2 cups of navy beans (I had cooked for a couple hours on the stove), it was perfect! Nice, thick, and perfect for fall/winter meals! Made enough to feed three adults, three kids, and have leftovers! My son's favorite soup yet!
