Hungarian Flourless Hazelnut Cake

I made this for some friends who are gluten-free and it turned out very well. A very different type of cake... mild and very nutty both in taste and texture, but mine didn't taste 'eggy' as another reviewer said. I followed the ingredients exactly but had to change the method a bit. Beat the whites first so I didn't have to wash the bowl and beaters (just transfer the whites to another bowl). Beat the yolks and sugar VERY well and added only about a quarter of the nuts and it started to get VERY thick. I decided to fold the rest of the nuts alternating with the whites mixing as little as possible to keep the air in the cake. Even so it only rose enough for two layers. Frosted it with chocolate whipped cream. The end result was a moist nutty cake that was slightly reminiscent of ferraro rocher chocolates. Also.. based on the weight of pre-ground nuts at my health food store, the 12oz actually came out to three cups.

A Pad Thai Worth Making

Overall good recipe, made it as written, but with fewer sprouts, we don't like them that much. We also found the lime flavor a bit strong, but adding more chili sauce did even it out. Next time I would use half the amount of lime juice. Also, I'd say the yield was more like 5-6 servings.

Monster Cookies II

Awesome recipe, mine didn't go flat. Mine are good looking cookies, contrary to other reviews. Made the cookies into balls and flattened them only slightly on a parchment-lined cookie sheet. Baked them at 350 for 10 mins and let them finish cooking for 2 more mins on the cookie sheet out of the oven. In my experience using parchment is key to turning out great cookies. They are crunch on the outside and chewy in the centre. Made half a batch and it almost overflowed my kitchenaid mixer. I would not have wanted to try and mix this by hand, it is a very stiff dough. Also used chocolate chips only, no m&ms.

Thai Chicken with Basil Stir Fry

Just like take-out. Doubled the coconut milk (used the whole can) and only 2 tbsp of soy sauce (tamari). Next time will scale back the vinegar more, it was a touch too sour. Did add the spoon of sugar that one reviewer suggested. Used a dash of thai chili and garlic sauce rather than the red pepper flakes. Added one sweet red pepper cut in chunks at the end of the chicken cooking phase, which added nice colour and more vitamins. Also used about a pound of button mushrooms rather than shitake. I was really unsure after tasting the coconut mixture at the beginning, but the ginger/garlic/basil additions are really strong and balance out the flavours at the end. This is definitley not a bland dish. The whole family loved it including my two-year old. Restaurant quality.

Chicken Enchiladas II

I never have the chiles on hand so left them out. Used leftover cooked chicken from making stock, a great way to use this up. A real simple family meal that is a hit with all ages. Thanks for sharing!

Margarita Salmon

Fantastic salmon.. got my brother to eat salmon even though he's not a fish person. I loved the flavours and marinated it for less time than written. Wrapped it in a big piece of foil to bake with all the honey-lime mixture to soak in.

Rhubarb Crisp

I was skeptical since I've never made a crisp recipe that mixed the oats in with the fruit, but this was fantastic. I made it exactly as written, with the exception of being a bit more liberal with the cinnamon and my rhubarb was frozen not fresh. Everyone loved this, I'll be making it again and again.

Mom's Coleslaw

An excellent creamy coleslaw recipe with zip. I used store-brand "miracle-whip" style dressing instead of mayo and it was excellent. Not the vinegary type of coleslaw. Also, I used the pre-shredded coleslaw mixture from the store rather than grating my own vegetables.

The Best Double Chocolate Chip Cookie

I was worried at first because the dough was a bit wetter than I'm used to but the cookies turned out perfectly. I used both a baking stone and non-stick pans with no trouble. The cookies ended up tasting like something from a bakery. I followed the recipe to the letter, used non-hydrogenated margarine, and changed the chips to 1 cup chocolate two cups peanut butter chips. Awesome.

Tomato Chicken Parmesan

Fantastic. Halved the breadcrumb mixture and had just enough. Used olive oil, mozzarella and hunts 4-cheese canned spaghetti sauce. Heated up extra sauce on the side. My guests though it was really good.
