About this Cook
My favorite things to cook
Used to be desserts of all kinds. Now that I'm older that had to stop, and I like to experiment now, mostly with healthy foods.
My favorite family cooking traditions
I especially love Easter because we pull out all the stops...Polish style. Ham, kielbasa, beet relish, egg-bread, and of course, pierogi. The next day I make "sour" soup, which is basically a thin white sauce made with some of the ham drippings and a little vinegar added to make the "sour." Then you put in the hard boiled eggs, bread pieces and kielbasa. Easter is my favorite food holiday.

Coconut Cream Pie IV
I LOVE coconut cream pie, and this was the best I've ever made. I followed the advice of others and cooked it longer than the recipe says and, voila! It came out perfect. And it is just as magnificent to look at as taste. A real crowd pleaser.

Buttermilk Hush Puppies
I love hush puppies and I thought these were great. I added a little cayenne pepper, extra salt and paprika. I liked this recipe because I don't keep self-rising flour on hand and I didn't want to have to think about the conversion with salt & baking soda because it was already taken care of in the recipe. Also, I used plain milk and added a little vinegar to make buttermilk. Even with the substitutions, they came out delicious.

Spinach Stuffed Portobello Mushrooms
Delicious. I used a little more mozzarella. I also added some sauteed onion and red pepper because I didn't have as much spinach as was called for and I thought it would need the extra moistness from the onion and pepper mix. Turned out fantastic and I think I'll just keep those small changes.
