Slow Cooker Green Chile Stew

The combination of seasonings in this recipe create the perfect heat in a wonderful chili/stew. The Yams give it a hint of sweet for the sweet/savory flavors. I did add a can of chicken broth to make it soupier, and used fire-roasted tomatoes. Didn't change a thing on the amounts of seasonings. It's just perfect!

Fiber One® Chocolate-Peanut Butter Haystacks

Very easy to make, and a nice blend of sweet/crunch! Even better, these tasty morsels are only 2points on Weight Watchers! Save it for a nice treat with coffee!

Pud's Potato Soup

Great flavor in this very easy to follow simple potato soup. I love the dill mixed with the basil. Very light taste. I did not add the butter, did not think it was necessary, and I added a bit more celery because I love celery - leaves and all. Very tasty for a chilly day meal!

Good Morning Egg Bake

Quick & Easy. I don't feel the soup is very good in it, and next time would not use it. Would substitute and use Mexican Velveeta. If you're in a hurry to just put something out there, this is a good one.

Aunt Karen's Brussels Sprouts Salad

Love brussel sprouts, and this is a delicious way to prepare them! I added the chilled brussel sprouts to a bed of chopped spinach, and touched off with a bit of Parmesan cheese. I also used a skillet to get the char on them after boiling them as the recipe instructs. The vinegar and oil mix on them is great!

Banana Muffins II

"Easy" is SO misleading! My husband and his friend were heading out this morning early. These were ready to go with them in 30 minutes...I did add 2 T of flour for high altitude baking, and a whole stick of butter. They are FABULOUS! Made 6 ginormous muffins (man-size muffins) They are light, full of flavor, easy to make and done in a heartbeat- can't beat this for homemade!

Easy Peach Cobbler

I did not have cream cheese, but I don't believe that made a lot of difference. It was very easy to make and tasted fabulous. I topped it also with a bit of oats and toasted pecans. Great use for fresh peaches that are almost ready to bite the dust!

Baked Kale Chips

Honestly, these barely made it out of the oven! I love Kale and was searching for recipes and I came across this. I did spritz them with olive oil and used a garlic and herb seasoning that is salt free. The crispy texture is just DELIGHTFUL! Just yummilioushious!

Old-Fashioned Pancakes

Never have made pancakes from scratch because I thought it was "too much trouble". I followed this recipe to the tee, using unsalted butter, and not only were they light and fluffy, but beat out the rubbery box mix by a long shot. I thought the ingredients mixed together delightfully and were spot on. My dog and I enjoyed these very much!

Mexican Bean Salad

Fiesta! Colorful, just the right spice, loaded with flavor this is going in my favorite salad recipe box! I only added some orange sweet peppers because they needed to be used. It's got a great texture and really quick to whip up!

Fresh Broccoli Salad

Next time I make this, I will cut the sugar, and add a bit of salt. You would think that with the bacon, it would be salty enough, but it isn't. I would put a dash of it in the dressing, and cut the sugar to 1/4 cup- if not slightly less. Easy to prepare ahead of time, colorful and a crowd pleaser.

Ranch Burgers

Upon cursory glance, this recipe is deceptively elementary. For your inner gourmet, you may pass it over- as I was inclined. However, I am SO glad I made it! I did sliders and they are perfect for a party because these burgers NEED NOTHING MORE to enhance flavor. No catsup,mustard, pickle: nothing. I did put cheese on a few and left a few naked. Wonderfully simple & delightful recipe!
