Easy Meatloaf

Absolutely fantastic! Our family (esp. the kids) seldom eat beef and this loaf has got everyone wanting a second serving, I ran out as I only made half the recipe. Like other reviewers, I sautee the onion with a bit of garlic first. I used red onion but don't think it would make a difference. I used double the amount of egg (simply because half a recipe is 1/2 egg, which would leave the other half useless). I also added a sprinkle of fresh chopped spring onion and 1 stick celery (chopped) in the loaf mixture. For breadcrumbs I just chopped up 2 slices of wholewheat toasted toast in a food processor. The sauce is the highlight. Like other reviewers, I doubled the amount of sauce, and it came out very juicy.

Teriyaki Chicken Wings

Very tasty and easy to eat. Good for all ages. My one-year old ate loads. I tried with 350g of chicken breast/leg meat. I tenderize the chicken first then cut into 1~1.5cm strips then marinate. Then instead of baking I just put chicken and marinade sauce in a wok/non-stick pan and cooked on medium/high for a few minutes till meat has just turned non-transparent. If you like chicken breast meat this way the cooking time is significant less. I bet you can marinate the night before even. I think with chicken wings baking is still better because the grease/fat would have all sipped out to make the wings tender but not fatty, whereas it is harder to achieve that effect in a wok/pan.

Pumpkin Soup

I used all ingredients accordingly except significantly reduced the amount of water and simmering time. The first time I made it with the liquid amount in the recipe and it just took way too long to reduce. Pumpkins don't need that much boiling anyways and I thought it retains flavor and nutrition better if not over cooked. I suggest using enough liquid so it's just covering the pumpkins (plus a bit more).

Pumpkin Cake III

Very yummy and homely. I shared with friends living close by and it was highly praised. The only thing is maybe slightly too sweet for my taste (i.e. not healthy enough. Oh, well it is a cake!). I used one suggestion of cream-cheese glazing/topping. I think it is the topping that made it feel even sweeter. So if you are using a cream cheese + sugar based topping maybe reduce sugar amounts in both the cake and the topping slightly

Honey Roasted Red Potatoes

Maybe I am a rather novice cook but I followed instruction quite tightly. I think it is rather bland like others said, but suppose that's a personal preference. The cooking time is definitely off. I am sure my oven is accurate in terms of temperature because with any other dish esp. cakes I had no problems at all. 35 minutes on this dish the potato is only half-cooked (with white bits in the middle (and I had quite small red potatos which I cut in 6th, not quarters). It does not have the soft/tender with lightly charred honey glazing feeling which I had hoped for. I am thinking I will try some suggestions of boiling the potatos first.
