Mom's Potato Latkes

I made these a few times and I think the cracker is a great idea! My grandmother used to make these with farina or matzo ball mix. She also mixed some salt with the shredded potatoes and let them sit for a half hour, (Salt draws the water out of the potatoes, therefore making crispier pancakes) then wring them out with cheese cloth. She used to add parsley, scallion, and ham or bacon too. Serve with sour cream or applesauce

Brunch Potato Casserole

The consistency of this was really nice, however the mayonnaise made it too sweet. I think next time I will reduce the mayonnaise to 1 cup and add an egg to the mixture.

Mom's Gourmet Grilled Cheese Sandwich

I really liked this a lot. I didn't have sourdough bread so I used Italian sliced bread, but I think next time I will try the sourdough. The Parm really gives it a nice flavor!

Avocado Tomatillo Salsa

I Love this recipe. Nice change from regular salsa. I added a little onion and some garlic. I didn't have Serrano peppers so I used jalapenos instead.

Salisbury Steak

Okay, I made this for the first time a couple weeks ago and followed the recipe except I only used one tablespoon of ketchup. The flavor wasn't anything special and there was not much gravy. I rated this from the first time I made it because it was closest to the recipe. The second time I made it I took morgmoms advice and used 1 packet of French onion soup mix (Lipton). Half the packet I used in the meat mixture and half I used for the gravy. I omitted the canned soup completely. For the patties I also added about a teaspoon of Worcestershire sauce, 2 tablespoons of milk omitted the salt and used eggs and breadcrumbs, of course. For the gravy, first I sautéed onions and mushrooms in 3 tablespoons of butter. Then I added 3 tablespoons of flour and the rest of the onion soup mix, and mixed that up for a minute or so. Finally I added 1 cup of beef STOCK, not broth and 1 cup of water. This was the best salisbury steak I ever made! I am going to submit this to allrecipes, although it takes them forever to review and post it.

New Wife Tuna Salad

I made a very minor change to this recipe. I didn't have any celery seed, just celery salt so that's what I used and I omitted the reg. salt. Oh, and I didn't have any honey mustard. This is the best tuna salad I have ever made, by far!!! (I also thought about adding this to macaroni and bell pepper to make pasta salad. Or how about adding apples or grapes to this recipe? Oh, so many wonderful ideas are going through my mind!) Thank you so much for this recipe, Graden!

Delectable Prime Rib and Au Jus

I made this last Christmas and it is simply fabulous! Making it again this year. I do not add salt; with all the other ingredients it's not necessary. Definitely restaurant quality and the best Prime Rib I've EVER had! Thanks for sharing!

Translation of Diane's review = Superb recipe! I forgot to put the ginger, but it was very good! I did marine a whole evening. A little dirty therefore less soy sauce. BBQ will probably be even more delicious than on the poele

Mom's Zucchini Bread

This had a really great flavor. I followed the recipe except I used 3 cups of Zucchini instead of 2 and I added a little nutmeg. I wish I would have drained a little of the water from the zucchini after I grated it. It took 90 minutes to cook all the way through and it was a very, very moist cake. Too moist. Oh, and I also used 1/2 cup oil and 1/2 cup unsweetened applesauce.

Turkey Enchiladas

This was pretty good but a little bland for me. The second time I made it I used chicken instead of turkey and I used flour tortillas instead of corn tortillas. I also added a small can of green chiles and a tablespoon of taco seasoning mix. No need to dip each tortilla into the enchilada sauce. I just poured it over the top and put extra cheese on top.

Greek Chicken

This is BETTER than the chicken at the Greek restaurant! Amazing flavor. Followed recipe exactly except I baked the chicken in the oven. Had to cook the breast a little longer, about 50 minutes, but it depends on the size of the pieces. Marinated over night and all day.

Pretty good as is. I rated this recipe based on the ingredients listed. This morning I wanted to make a breakfast casserole so I took the leftovers and put them in a casserole dish (don't forget to spray it with cooking spray) sprinkled some sharp cheddar cheese over the top then scrambled some eggs in a bowl with some black pepper, then poured it over the top. Baked at 350 for 30 minutes. This made it a 5 star dish! Will make this again.

Chili Cheese Potato Skins

This was just okay until I started adding my own twist. This meat was suppose to be "chili" but not much chili flavor. I added one large garlic clove, a heaping tablespoon of Oscar Meyer Hickory smoked Real bacon bits, one heaping tablespoon of ketchup; cayenne pepper, black pepper and oregano to taste. Since it needed to simmer for a few minutes to absorb the flavor, I added chicken stock. I did not fry the potato skins, I baked them for a few minutes. I also added fresh chopped scallions to the top once it was done baking. Much better. Now it's five stars!!!

Chicken Parmesan

OMG!! So good. I used my own homemade breadcrumbs (garlic powder and olive oil). Topped only with mozzarella (it was all I had) and my homemade marinara sauce. Amazing!!!

Sausage Biscuits and Gravy

WOW!! This was really good stuff. Make sure you get MAPLE sausage for a terrific flavor. Good thing I wasn't alone or I would have eaten it all myself! Amazing!!! UPDATE: If you don't have maple sausage you could add a little syrup to the sausage to give it the maple flavor.

Mushroom Soup Without Cream

This is really good soup. I put chicken in it so I didn't have to use as much chicken stock, I just added a little more water. I also put some barley and zucchini that I had to use up. Very good!

Double Tomato Bruschetta

I didn't have any sun dried tomatoes but it really didn't need it. However, I did add some diced sweet onion and it was wonderful! Those are the only changes I made. Next time I might even add some diced black olives. Thanks for the recipe.
