"Penne with Mushrooms" was the recipe for tonight under Mostly Veggies Menu in my profile.Preparation was fairly simple.I served it with roasted eggplant.I was looking for vegetarian friendly recipes for a main meal and this was my choice.I added more garlic,some italian seasoning and a 1/4… MORE

Angel Hair with Feta and Sun-Dried Tomatoes
Rating this ok may be me cooking is a challenge for me.I found it took me longer.I read you had to rinse then soak sun dried tomatoes so next time I will use in a jar.Then it was a bit bland so I added mushrooms I had to cut and saute.When I added my cheeses it got a bit gummy so I added a bit more olive oil and liquid.In the end it was good so I will be making it again.

Chicken Breasts with Herb Basting Sauce
Worthy of your fancy dishes for company or quick week night meal on those everyday plates.I don't do not sauce so I left it out.After all it has pepper.I fixed all the ingredients the night before in a zip lock bag.At dinner I simply followed the cooking instructions.I had sweet potatoes and beets to use so I wrapped them in foil with olive oil and garlic.I put them in the oven as the chicken baked.This needs to go to the top of my favorites.

Farfalle with Giardiniera, Cherry Tomatoes and Shredded Mozzarella
This was super quick.I added a bit more juice from the giardiniera and olive oil.I seasoned it a bit with salad supreme and added red onion.I served this with grilled chicken italian sausage.This was a make ahead tasty Summer meal not full of fat as it wasn't dripping in oil.
