Coconut Macaroons III

This was a good an easy recipe. To cut some of the sweetness I used unsweetened coconut with great success. I also found that these tasted much better the day after they were made. So if possible, make them a day before serving.

Flourless Chocolate Cake I

I made this last night for our guest who can't have gluten. What a hit! I made a few changes of my own. I used unsweetened squares so increased the sugar by 1/2 cup and the water by 1/4 cup. I took the advice offered and used 3 eggs and 3 egg whites. I did not cook it in the bath and it turned out perfect. I also heated each slice for 15 seconds in the microwave and served with a scoop of vanilla ice cream. Delish! The major change i did to the recipe was to add a shortbread crust. I made it with gluten free flour (rice flour), brown sugar, butter and pecans. I baked it first and then put in the chocolate mixture. The crust offered up a little bit of crunch and color to the plate. Will definitely make again!

Kettle Corn

After reading many of the reviews I also made some changes to this recipe. I used the ingredients as suggested by Sue, but put only the oil and 3 kernels in a pot, as suggested by many reviewers. While that was heating up, I "browned" my sugar in a small non-stick frying pan (melted it). Once the three kernels popped, I added the melted sugar (which does turn a little brown so don't be surprised) and the rest of the popcorn. Next time I might try brown sugar for a more caramelly flavour. It turned out great, and none of it burnt.

To Die For Blueberry Muffins

This recipe is amazing. I've made them two different ways...regular size and mini muffins. The mini size are perfect for a brunch or shower. I checked them after 15 minutes to see if they were done. I've actually been making these for at least 2 years, but just haven't posted a review!

Extreme Banana Nut Bread 'EBNB'

I've given this a second try and was more satisfied than the first. I find this quite greasy and next time will decrease the butter slightly to see if it is ok. I made mini loaves (5 of them) with this batch. It's a great way to make it so that you don't have a whole large loaf on your counter, calling your name! Also, I used pecans because that's what was in my cupboard, but I ground them first.

Brown Sugar Chops

We really enjoy this recipe in our house. I did as suggested and melted the butter and mixed all the ingredients to marinade before cooking. The sauce is also really yummy on mashed potatoes!

Fruity Grilled Pork Tenderloin

Although I didn't use any soda/cola, this recipe turned out well. I cooked it in the oven for 45 minutes at 350F and it was nice and moist.

Spiced Yogurt Pound Cake

Love this cake! I made it in two loaf pans and cooked it for 45 minutes on 325F. The only problem I had was that it 'fell' after I took it out of the oven. Next time, I'll turn the oven off after 45 minutes and leave the loaves in the oven until it is cool (they were a little under cooked, despite the fact that my toothpick check was clean). Great recipe!

Apple Raisin French Toast Strata

Loved this! So did the rest of my family on Christmas morning. As recommended, I used light cream cheese...melted, and cooked it on 350 for a little longer. I also used two cups of apple instead of one.

Chocolate Turtle Cheesecake I

Loved it! Like someone recommended, I left it in the oven after the cooking time was finished. It was super yummy and quite easy to make. I took it to my bookclub and everyone loved it! I used a graham cracker crust also.

Slow Cooker Chicken with Mushroom Wine Sauce

I have tried this recipe a number of times and can't get it to work out. I love mushrooms and I thought this sounded good. No matter how I adjust the cooking time, the chicken always turns out dry. I've tried it in the crockpot and in the oven with no success. Unfortunately I have to remove it from my cookbook.

Honey Bran Muffins

These are great! I made them originally for my daughter but she hasn't taken to them yet (she's only 18 months!) but my husband and I love them! Instead of adding the raisins whole, I soaked them in boiling water to plump them up and then pureed them in the food processor. This gives them the taste of raisins without the raisins themselves...which my daughter tends to pick out. Very moist...most yummy!

Cassandra's Yummy Lamb Chops

My husband loves lamb so I thought I would give this a try. It was very easy to make and my husband loved it...I will definitely make it again. I made 4 chops instead of 2, but didn't change the amount of garlic, used the same amount of oil and just poured the wine in until it covered the chops.
