Best Cream Of Broccoli Soup

Very good and easy recipe. Just a note...when you melt the butter and add the flour and milk, make sure you cook the flour in the butter for a minute or two before adding the milk so you avoid that "raw flour" flavor. Additionally, I pureed half the broccoli and mashed the other half, so to have a heartier soup. I also substituted 1 cup heavy cream and 1 cup milk so it would be richer.

Quinoa Vegetable Salad

Just made this and it's really great. The only reason I gave 4 stars instead of 5 is the saltiness of the dish. I used the 2 teaspoons as instructed when cooking the quinoa. Fortunately I tested it before adding more at the end. Far too salty for my taste. Will definitely make this recipe again, but will reduce the salt to 1 teaspoon at the beginning...and omit it all together at the end. Otherwise, it really is excellent.

Amazing Apple Cake

Glad I didn't listen to the reviewers that gave this a poor rating. As I was mixing the apples and walnuts into the batter, I thought "this can't be right...there are entirely too many apples and not enough batter!". But I'm not too proud to admit when I'm wrong. And was I wrong! This cake is moist, chocked full of apples and walnuts, and definitely a keeper. The only note I would add is that I greased and floured my 9x9 baking pan, since I am used to doing that anyways. I'm glad I did. The cake pops right out. Try this cake!
