Southern Potato Salad

Everyone has their preferences when it comes to potato salad...no celery...no eggs..extra pickles...warm..cold...etc. However - this is the basic recipe for a true Southern potato salad. Now I'll admit - I like it cold - not warm - that's just the way my family always ate it. Also - my Granny always tossed her potatoes with white vinegar right after they came out of the pot and drained (about 2 TBSP for each 2 Pounds of potatoes). Then waited for the potatoes to get just warm and tossed them with the dressing. I just don't think you can replace that soaked in vinegar flavor with ANY dressing and I love it that way. Also - unless you like "mashed potato" salad - ALWAYS mix everything but the potatoes in a separate bowl and then GENTLY FOLD it into the vinegar coated potatoes while they are warm. Seve it warm - or let it sit in the fridge overnight - YOUR CHOICE. Omit anything from this recipe that you DON't like in your potato salad - but the portions of all the ingredients are right on!!!

You've Gotta Be Kidding Onions

I tried this recipe for a family gathering - primarily because most everyone in my family LOVES onions. Even though it looked like a really odd recipe - how could I go wrong with onions????? This is just incredible. Even the very few members of my family who are not onion lovers thought it was GREAT. They didn't know it had onions in it (how strange is that??) Everyone thought it had PINEAPPLE. And I admit - somehow - it really does have a pineapple flavor to it - at least with the Vidalia onions I used. I've had several family members ask for this recipe since I first made it - and they all got RAVE reviews. I made it again today for a Memorial Day Bar-B-Que tomorrow. I have every confidence it will be a hit - AGAIN! PS - definitely cut the onion slices in half - much easier to fit on a cracker.

Amy's Cilantro Cream Sauce

This is great. I've used it on everything from fish tacos to carne asada. Basically - if I'm cooking any kind of Mexican or Tex-Mex - I make this sauce to serve as a side. It has become as much of a staple as salsa.

Pina Colada Pie

This is just superb. I've made it full bore and with low fat ingredients (cream cheese, cool whip, pineapple not in heavy syrup). Of course - the full bore, full fat version is better. But the low fat does work if you're worried about that. Also - I prefer a graham cracker crust rather than vanilla wafer. And I usually use 1 cup of toasted coconut - half to put in the pie and half to sprinkle on top.

Flatlander Chili

I have searched for years for a great chili recipe - and I've finally found one!! After reading all the reviews - I tried to follow the recipe as closely as possible - but with what I had on hand. I didn't have tomato juice - so I mixed a can of tomato paste with beer to make the 46oz. No tomato sauce - so I used canned diced tomatoes (with juice) instead. Lastly - I didn't have ground beef - but I did have ground venison - so I used it. Next time I'll actually make a trip to the store and get everything I need. Because - if it is this good with the few changes I had to make to accommdate my pantry - I can't imagine how good it would be following the recipe exactly. This is a winner!!!!!!

Kalua Pig in a Slow Cooker

My husband is a pork fanatic and he says this is the BEST pork dish I've ever cooked. Couldn't bear to tell him how easy it was. I finally found the Hawaiian sea salt at Target - after going to several "specialty" stores. The only change I made was the cooking time - maybe my cooker is hotter than most - but the roast was completely done and tender in about 10 hours. EXCELLENT!!! This will become a staple in my home.

Awesome Slow Cooker Pot Roast

I have made this recipe more times than any other recipe. I have made it exactly by the recipe - I have made alternations: using good red wine instead of water, adding baby portebello mushrooms and vidalia onions at the beginning, adding potatoes and carrots during the last hour or so - to name a few. No matter how you make it - if you follow the basic premise of the mushroom soup, onion soup mix and liquid - you just can't go wrong. The original with no changes at all is INCREDIBLE - but with a little imagination you can have fun with this one and be assured you'll have a hit!

Mandarin Almond Salad

GREAT salad. I've made it several times - once right by the recipe which was wonderful. Since then I've added Ramen noodles (a good replacement for croutons) and about a tablespoon of toasted sesame oil to the dressing. Tastes a little more oriental which I enjoy.
