Chicken Tortilla Soup V

This soup is SO wonderful and yummy. I serve it with a nice bit of shredded cheddar and broken tortilla chips on top. This is one of my all-time favorite meals. And it's so easy!

Cajun Spice Mix

Perfect substitute! I just made a recipe of Cajun Sausage Pasta tonight which called for Cajun Seasoning (which I don't have) and I used this recipe and the dish was delicious!!! I didn't add the red pepper flakes because my kids probably wouldn't eat it and I did slightly less cayenne for the same reason and it had JUST enough bite for us. Thank you!

Meatball Nirvana

We love these meatballs! I've made them for our family so many times. I've started making a double batch so I can freeze half of them (fully-cooked). All in all, they are excellent and I'll be keeping this recipe around forever.

Italian-Style Chicken and Pepper Saute

So delish! My whole family loves it. I think the only changes I made were: 1. I cut my chicken into strips before browning it. Also salted and peppered them as they were cooking. 2. I didn't have tomato/pasta sauce on hand, so I used diced tomatoes then added some italian seasoning. I'll be making this many more times. So simple!

Cheddar Baked Chicken

We all loved this (me, hubby, and 3 year old daughter). It was so tasty and easy! The only changes I made were that I subbed Olive Oil for the butter and used whole wheat flour instead of All Purpose. The chicken was so moist and the breading was so delicious.

Chicken Pot Pie IX

Baked Oatmeal II

This was excellent! I used this recipe to bake some oatmeal for friends who lost power in Hurricane Sandy. I made a couple changes and it was delicious still. I substituted applesauce for the butter (1 to 1), used slightly less brown sugar, and added one chopped macintosh apple at the end. Yummy! Everyone loved and appreciated it.

Spinach Stuffed Chicken Breasts

Wow! I made this last night (with a few alterations) and it was fabulous! I didn't have all the ingredients on hand, but I was really craving a good stuffed chicken breast. I altered the ingredients as follows: Added a small handful of jarred, chopped roasted peppers. I substituted Parmesan for the feta b/c I didnt have feta. I omitted the bacon b/c I didn't have it. It was great even without it! So here is how I made the chicken: Mixed together the spinach, mayo, parmesan, garlic. Butterflied the chicken and sprinkled with some salt and onion powder. Stuffed the chicken. Quickly seared both sides of the chicken in olive oil in a saute pan. Popped in the oven (covered) for 30 minutes. Perfection!

Delicious Egg Salad for Sandwiches

Quiche

This was great. I made it last night for dinner and my husband and I both loved it. I made a few variations, just to add some more nutrients. I didnt have Swiss cheese, so I used Sharp Cheddar. Along with the ham, I added some thawed/drained chopped spinach and some lightly sauteed chopped onions. I didn't freeze it, I just made it in the afternoon, stored it in the fridge, then cooked at about 375 for 1 hour. Yum! I'll definitely make this again.

The Best Meatloaf

This is one of my new faves. My hubby, toddler, and I all love it. The only change I've made is not adding the green peppers, only because I didn't have them on hand. It's still great and I'll keep making it!

Herbed Chicken Strips

This was excellent! I made it last night for me, hubby, and our toddler. We all loved it. It was easy, and it was perfect for me because I wanted to stay away from the same old, same old chicken breasts. The only changes I made were: 1. I used red onion (that's what I had) 2. I only used about 2 Tbl of butter and about 2 Tbl. of extra virgin olive oil. I dont really like to cook with lots of butter if I dont have to. Even with these changes, it was delicious and I'm adding it to my go-to meals!
