Butternut Squash Soup II
This soup is fantastic - a hearty, healthy treat on a cold fall or winter day. I usually add red bell pepper, minced ginger, and garlic in with the vegetables. I like mine chunky, so instead of transferring to a blender (which is just more work and messy) I just use a potato masher and mash the soup in the pot. I also add a little cooking sherry and let it simmer and reduce a little. Family LOVES it! Delicious.
