Roast Pork

I prepared this for a Christmas party gathering. What a hit! I made 2 6-lb roasts and there was 1/2 a roast left after serving 12 people. Prep notes: I doubled the recipe since I fixed 2 roasts. I used low-sodium soy sauce, reduced the amount of sugar by half - and increased the garlic. I will definitely be making this again.

Mexican Style Meatballs

Good meatballs - a bit spicier than I expected, however. I served them with jasmine rice. Makes plenty - enough to freeze for another meal.

Favorite Banana Blueberry Quick Bread

Very good bread. It is a dense bread with rich flavor. I doubled the recipe and it worked out just fine. I used frozen blueberries (1-1/2 cups) and an extra 2 TBSP flour for high altitude - we're at 5200 feet - and lowered the temp to 325 half way through the baking. Perfect!
