Layered Peppermint Bark

So easy and TOTALLY kicks traditional bark up a notch. This is a big hit every year, I don't change a thing and it's creamy on the inside with a great snap and crunch on the outside.

Cream Cheese Squares

These are really simple but I really enjoyed them! I mixed the cream cheese with some melted chocolate to spruce it up a bit, it was really fantastic.

Eggnog Cheesecake III

This was a huge hit!! I just used a store-bought graham cracker crust to save on time, and it worked fine. I had too much filling for the crust through so I just sprayed a loaf pan and poured the rest of the filling in and made some crust-less cheesecake bars, which were also fantastic! I will make this every year for Christmas!!!

Braised Balsamic Chicken

I really enjoyed this recipe. So easy, and really healthy. I made a change though, I didn't use canned tomatoes I just diced fresh ones and added some water and simmered. It came out great it with less sodium than using canned. I served it with quinoa. Will definitely make again!

Fluffy Pancakes

I started making this recipe and I realized after prepping the milk/vinegar that I didn't have baking powder *gasp* or eggs! I just omitted the baking powder, and I used the equivilant of 1 egg's worth of egg-whites. I also added a BIG splash of vanilla. They were fantastic, I will definitely keep this recipe on hand for all my future pancake breakfasts!

Janet's Rich Banana Bread

I really liked this recipe! It was SO easy which was my favourite part! I used greek yogurt instead of sour cream and after reading the reviews I mashed the bananas instead of slicing. Next time I have leftover bananas I will definitely use this recipe!

Garlic Spinach

This is a super easy way to make spinach taste good, haha. The garlic and lemon are a great compliment. It's a great five-minute side dish.

Melissa's Turkey Meatloaf

I really liked this! It went over very well with my roomie who I made dinner for. I made some small changes - I omitted the milk & celery as I didn't have any, but I did add a little bit of BBQ sauce to the mixture. Then I poured the soup overtop. I cooked it for 45 mins covered then about another 14 uncovered. It sits in a lot of liquid but the meatloaf itself wasn't too moist or loose it was nice and tight and there was lots of yummy sauce to pour over it! I'll definitely make this again, it was easy to make, standard ingredients I almost always have on hand, and it's moderately healthy! Thanks Melissa, this rocks!

White Chocolate Blondies

FANTASTIC! These were quick and easy, and a huge hit at the office! The only thing I changed up is I used a bigger baking pan so they were a little thinner but the recipe yeiled more. I am already making this a second time, they will definitely be a part of the holiday baking bundles I give to my friends.

Chicken and Gnocchi Soup

This recipe has been making it's way through everyone in our office!! EVERYONE had to try making this soup. It's delicious, what a great idea. Cornstartch/water omitted. We had no cream, so used skim milk and a little bit of sour cream and it worked out wonderfully. Also instead of shredded carrots we just used chopped baby carrots and that was fine too. Thanks for this great recipe, it shall definitely be a repeater!
