Sam's Famous Carrot Cake

OMG! I made this for a friend's birthday and it was delicious. I did 1.5 x recipe and it fit perfectly in 3 - 9" cake pans. I didn't use the raisins, but made up for it with extra carrots, walnuts and coconut. Doubled the Cream Cheese Frosting II to ice 3 layers and it was perfect! One of the best carrot cakes I've ever had, because it was very moist, and had so many good things in it!

Colleen's Slow Cooker Jambalaya

This was excellent for a slow-cooker version of Jambalaya. i put the chicken breasts in whole, then shredded them after they cooked for 4 hours. I didn't have any shrimp, so used 2 lb of andouille. I chopped up one to cook with the rest of the ingredients, and grilled the other pound to slice and throw in at the end. I also added 1 cup raw rice the last hour....i also added the rest of the can of chicken broth. it was WONDERFUL.

Chicken Fajita Marinade

This is one of the best fajita marinades ever. I also use it for beef and grilled shrimp. My kids love chicken tenders marinated in this, then grilled. Fantastic recipe!!

Delicious Egg Salad for Sandwiches

This is a wonderful basic egg salad. It's great on crackers or as a sandwich. I followed some of the other suggestions and added a stalk of chopped celery and a few chopped sweet pickles. It was exactly what I was looking for.

Jalapeno Popper Spread

Oh my gosh, this is good! My guests couldn't get enough. It tastes EXACTLY like a jalapeno popper! I did take the advice of a couple of others and added Panko crumbs to the top. I sprayed the top of the crumbs with spray butter and baked it in the oven. It was crispy on top and creamy underneath. I also used the whole can of jalapenos, and it wasn't too spicy at all. I can't say enough about this recipe and will make it again and again! Thanks for sharing!

Grilled Tilapia with Mango Salsa

This was so good, fresh and healthy! My husband doesn't like sweet sauces on his fish, so I mixed up everything in the salsa except the mango and divided it into two bowls. I put chopped tomato in his to make a pico de gallo, and put mango in my half. It was delicious! The fish marinade had a wonderful flavor also. Will definitely make this again!

Favorite Hamburger Bites

These taste almost exactly like the "little square burgers" at a local drive-thru! I followed the advice of others and only used the onion soup mix. I also added a squirt of yellow mustard to each sandwich before baking. These freeze well, too! Great, easy recipe.

Easy Slow Cooker French Dip

My family LOVED this. This is by far the easiest and best tasting french dip ever. I also added quite a bit of Worcestershire sauce and garlic salt. I think my husband also added a few dashes of Tabasco behind my back! Very, very good.

Peach Cake II

This was so good and a great way to use up an abundance of fresh peaches! I made the butter sauce to pour over the top (recipe in one of the previous reviews), cut the sugar down to 1 1/4 c., used half the oil, added 1 more cup of fresh peaches (3 cups total), added 1 cup fresh blueberries, 1 tsp vanilla, and I also toasted the pecans before stirring them into the batter. It was delicious!!

Cajun Style Blackened Snapper

This was fabulous. I also took the iron skillet outside and put it on the gas grill to avoid smoking up the house. Worked great! I cut the red pepper in half and it was still hot enough. For a wonderful Cajun Cream sauce to put on top, combine 2 T. cornstarch in 1/4 c. water. Saute 1 chopped shallot in 2T dry white wine until softened. Add 1 T. blackened spice mix (from above recipe), and stir in 2 cups heavy cream and heat. Add cornstarch mixture and cook, stirring until thickened. YUMMY! Happy eating!

Spinach and Orzo Salad

YUMMY!! We made this at the beach and it was wonderful. It was even better the next day. I didn't make any changes in the recipe, and every time I make it, people ask me for the recipe! Very light and summery.

Pesto Chicken Florentine

This recipe was definitely "a keeper". Everyone in my cooking co-op loved it. I even used light margarine and skim milk to make the alfredo sauce and it was still delicious. I read the other reviews and also added a whole bag of spinach. We'll be making this again!

Brisket with BBQ Sauce

This brisket fell apart it was so tender!! I marinated it all day, then put it in the oven all night (8 hours). I fixed it for our neighborhood co-op and served it with rice. The leftovers were great on a bun! This is one of the best brisket recipes I've tried.
