Braised Balsamic Chicken

This was very tasty, but I did amend it by cutting the balsamic vinegar in half. I have been caught before by adding too much vinegar to a recipe so I was cautious with this one. A quarter cup was plenty, gave it a nice bit of bite. Will make it again.

Scallops Provencale

This was excellent. The only change I made was to use Herbes de Provence instead of tarragon and rosemary. I served it over rice and it tasted quite gourmet. A great way to cook scallops.
