Old Fashioned Strawberry Shortcake

Something is missing from this. Other than a soft, dense texture (which I thought was good), it's really lacking in flavor--I even added vanilla to the batter. I used salted butter which is probably why I found this to be too salty. I plan on keeping this in my recipe box, but will try to tweak it so it's more flavorful.

Chicken Chimi in the Oven

These crisped up and were pretty tasty. My only problem (and it's my own fault) is I didn't have enough mild salsa for 2 cups. So I used 1 cup mild and 1 cup mango salsa which gave this an odd flavor. Also, I debated whether or not to use the cinnamon, so I was only going to use a small dash. But, once again, a mistake was made and I over-did the dash. So I didn't like the overall flavor of the chimis. I sprayed a cookie sheet with cooking spray, placed my chimis, and then brushed on some olive oil. Baked for 15 minutes, then flipped them and baked for another 5. Perfectly crispy. I'll definitely make these again!

Chicken Tortilla Soup V

This is a very good and easy soup! I threw my chicken breasts in a pot with 3.5 cups of water and added 3 tsp. of chicken bullion (Better than Bullion brand). Then I added the onion, garlic, cumin, and salsa. Boiled and simmered it until the chicken was fully cooked. I removed the chicken and shredded it while the broth continued to cook down for a slightly thicker soup. Then I added the chicken back along with a can of black beans and the corn. When I make this again, I'll use 4.5 cups water (4 tsp. bullion) and 1.5 cups salsa just to have more of the "broth". I'm definitely adding this to my recipe box! Thanks for sharing.

Chewy Almond Butter Cookies

I am quite surprised by these cookies. I used butter instead of shortening and only the 1 cup of brown sugar. My homemade almond butter is slightly sweetened, so I didn't think 2 cups of sugar was necessary. These are light in texture and flavor. I also added a few Trader Joe's sliced honey roasted almonds to top each cookie. Initially, I was a little worried because the dough seemed too light and fluffy (not enough flour), but they came out perfect. I used a cookie scoop so I didn't have to get my hands dirty. Thanks for sharing the recipe!

Minute Chocolate Mug Cake

I tried something like this before and it turned out horribly, so I was reluctant to try. But I'm glad I did! I didn't add the coconut or nuts and I accidentally put the baking powder in the chocolate mixture instead of the flour and it turned out just fine (score! 2 less dishes to wash). I had to bake mine for a minute because 45 seconds "seemed" like it wasn't cooked enough. It was a little dry, so perhaps I overcooked it a bit. I would definitely make this again and with some vanilla ice cream. Thanks for sharing!!

Banana Banana Bread

I gave this 4 stars because I tweaked it quite a bit. I didn't want to rate it super low because I changed some things and have the recipe "suffer". Anyhow, I substituted 1 c. of the flour with 1/2 c. ground almonds (leftover from making almond milk) and 1/2 c. flax meal. I also used 1/4 c. unsweetened applesauce and 1/4 c. canola oil instead of butter. I used 3.5 very ripened bananas and only 1/2 c. brown sugar. After I mixed the wet and dry ingredients together, I set it aside so I could chop up some pecans. I was hoping that time would allow the liquid portion of the recipe to moisten the flax and almonds. I baked it and it came out moist and tasty. Thanks for sharing!!

Flatlander Chili

I made this for the first time this week and loved it. I never thought to add tomato juice. I omitted the celery and green onion and used almost the whole bottle V8 juice (46 oz). I also used 1 can of kidney beans and 1 can of black beans, drained and rinsed. With all the added canned ingredients and V8, I thought I should only use a 1/2 of salt. It was still a little too salty for me. So the next time I make this, I'll omit the salt entirely.

Melt - In - Your - Mouth Shortbread

I didn't find these as amazing as others, unfortunately. I whipped the butter for 15 minutes as someone else suggested and kept everything else the same, other than rolling in sprinkles and pressing flat. The taste was off. Almost like too much corn starch or something. It was definitely lacking in flavor.

Roasted Red Pepper Cream Sauce

With the exception of using Parmesan instead of Romano, I followed this recipe exactly. It came out very soupy. I had high hopes, especially when cooking the peppers, garlic, and basil for 10 minutes. The house was very fragrant. After adding the HH and cheese, I tasted it and it was SO bland. So, I added at least a cup more cheese, salt and pepper, onion and garlic powder. Fortunately, I don't plan on serving this until tomorrow, so hopefully the flavors will mingle over night and it will thicken a bit. I will use this as a base recipe, but next time I'll chop up some onion, double the garlic, and add salt and pepper while those are cooking. I know Romano and Parmesan are made from different milks (one's goat the other's cow), so perhaps using Romano will help next time too.

French Salad Dressing

This is spot on for store bought! I halved the recipe since I didn't know how much I'd like this and it came out well. You don't need to dirty a blender for this. A small whisk worked just fine. My only complaint was that it was too sweet. The next time I make this, I'll cut the sugar a bit. Thanks for sharing!!

Creamy Frosting

This frosting in a nutshell is...meh. I followed Justme's directions and the consistency was decent. You do need to be patient and having a kitchen aid mixer was definitely helpful. I covered a 2 layer cake and I had a hard time making it look good because the consistency wasn't working well. I can see why some people said this works better if you pipe it on cupcakes. The cake would've looked much better if I piped stars (or the like) all around it. As for taste, it's very butter-tasting. I even added some more milk and powdered sugar, but that didn't change it. I decided to use this because my family doesn't like sugary frosting and this recipe is definitely NOT super sweet.

Chocolate Chai

This is basically hot chocolate with a hint of chai tea. I used a bag of chai tea and thought I wouldn't need all the other ingredients. Perhaps that's why mine came out lacking in flavor. I will continue to use the chai tea bag and increase the water, but decrease the amount of cocoa.

Smoky Grilled Pork Chops

Just made this tonight. Both my husband and I really enjoyed this. We followed the recipe exactly except for washing the chops. For those people who complained about the rub being a gloppy mess, they are correct. However, I found that after rubbing the meat for about 20-30 minutes, the rub stayed on the meat. It just takes time. Be patient and it'll form a nice crust. Now...a word of caution...make sure when you go to grill, don't place the meat directly over the coals. I completely forgot about the rub having brown sugar and when I left the chops for all of a few minutes, I returned to most of them being charred.

Easy Beef Stroganoff

Very good recipe. I tweaked it by halving the recipe, adding a splash of red wine to the beef stock, added garlic powder while cooking the beef, and adding a cup of frozen peas at the end. I browned my ground beef and set that aside and made the mistake of melting butter and beginning my roux instead of sauteing the onions. But it didn't matter. I just turned down the heat a bit and cooked the onions while the flour and butter mixture was cooking. Hubby and kids said it was good! I think for next time, however, I'll double the sauce (use original recipe amounts) but continue to keep the one pound of ground beef. Definitely a keeper!

Korean Spicy Chicken Tenders with Sweet Apple

This dish is quite tasty. I'm half Korean so we always have gochujang on hand. My husband wasn't too keen on the apples' consistency of being partially mushy, but overall, the dish was a hit. I served this with some rice and a Korean cucumber salad. The sweetness of the cucumber salad went very well with this dish. Will definitely make it again! Thanks for sharing.

Barbequed Ribs

For a meal that took 2 days to make, this was just ok. The rub and/or sauce (I couldn't tell which one) was very heavy with chili/paprika taste. Mine also came out a little overdone but I think that's because my oven tends to run hot. So if I make this again, I'll only cook it for 2 hours. I took the other reviewer's advice and smashed the roasted garlic into the ribs just before the rub--not that we could taste it. I had used the Sweet Coleslaw recipe from this site as well as some garlic bread. The hubs and kids were happy, although we all knew this wasn't anything spectacular.

Hamburger Buns

These were very easy to make and the taste was good. I found that it took quite a long time to knead, however. They do rise considerably and I weighed the dough at 4.8 oz before rising and they came out too big for our tastes. Next time, I'll weigh them at 3oz and go from there. Thanks!
