Tom Ka Gai (Coconut Chicken Soup)

Wow, this was VERY good! I was hesitant about making it just seeing the ingredients, but after reading all the rave reviews, I thought I'd give it a shot. I used chicken broth instead of water, like other reviewers did, and also added a lemongrass stalk. I added about 2 tablespoons of sugar, too. I also threw in a bunch of quartered mushrooms, and some black pepper. Tastes just as good as the soup I order from the Thai restaurant down the street that I'm so addicted to. YUM! Has just the right amount of heat, too, which is always good in this household. :)

Baked Mac and Cheese for One

This is a very tasty mac & cheese. Beware though when increasing the serving size. I wanted to make 8 little ramekins, so I upped the serving size to 8 on the recipe. The measurements all adjusted and so I went with what it said, even though I thought it all sounded like too much for the amount of macaroni. Turns out I was right - by the time I added the macaroni to the sauce, it was swimming. WAY too much sauce. I ended up just scooping the macaroni out of the sauce into the little dishes and saved the rest so I can make another batch sometime soon (just add some cooked macaroni). So, it's very good - just be careful when you want to make more than one serving!

Holly's Hummus

I found this recipe to be quite good - but I did a few tweaks... I doubled the recipe and used quite a bit more garlic than what was called for (I love garlic). I also used more than what was called for on the basil and cilantro. I also added a couple tablespoons of water after I heard some complain about the consistency being too thick. I only used probably 1/4 cup of the olives in the doubled recipe, and I added about 2 extra tablespoons of fresh lemon juice (I like tangy, too). To finish, because I like some heat with my hummus, I added about a 1/2 tablespoon of cayenne pepper. With all those changes, it tastes fantastic! I love that it's healthy, too. :) Enjoy!

Bacon Cheddar Jalapeno Poppers

I made these for a Christmas party and they were a hit! I cut the raw bacon in half down the middle lengthwise before wrapping, and it was plenty. I think using a whole piece would be too much. They're greasy, but very yummy!

Baby BLT

These take some time to make but are well worth it. I made these for a Christmas party as an appetizer and everyone LOVED them. Very, very TASTY! To help with the presentation, I used a very sharp knife to slice a tiny bit off the bottom of each tomato. This helped them to stand up straight on the presentation platter and stopped them from falling over.
