Basically just a regular guy who enjoys cooking. I cater, offer classes in home and have a 2 year plan to open my own restaurant. A simply farm to table concept focusing on local, organic and sustainable ingredients.
My favorite things to cook
I love cooking everything. I lean toward Italian and Asian though. I love fusion and molecular cooking as well as old rustic cooking. I can cook sous vide on side of the kitchen while cooking on my 80 year old wood stove on the other side if the kitchen.

My cooking triumphs
Building my immersion circulator and cooking a 30 hour prime rib. It was amazing. Making 2 zombie cakes for a local movie. Cured my own duck breast prosciutto, and am working on a capicola presently.
My cooking tragedies
There are so many, but I'll never forget a miso snapper I tried once, it was one of the most horrible things ever, but it looked good. LOL
