Finikia

Fabulous recipe (although I think I've seen it elsewhere on the web, too). Finikia is an awesome cookie with a soft texture made interesting by the semolina flour. I'm so glad I can make them at home, since I don't have access to a lot of Greek bakeries. Just make sure you don't boil the syrup too long or you'll end up with a candy coating on the cookies. Fresh-squeezed orang juice greatly improves the cookie's flavor, too.

Milk Tart

Not bad, but I think I would have preferred a crisper sugar cookie crust. Mine puffed and remained soft after baking. The pie was extremely sweet, too -- might be improved with some lemon zest or oil.

Banoffee

I really didn't like this, but, since I've never had Banoffee Pie before, I have no idea whether it's just me or the recipe. First of all, boiling a can of condensed milk for 3 hours is a pain in the butt. When the milk had boiled for 3 hours, I opened it and was horribly disappointed. I was hoping for a sort of Dulce de Leche; instead, it was like a very rubbery jello and didn't taste very good. I continued with the pie making, but it didn't get much better as the pie is dependent on the boiled milk. Whipped cream and bananas can only cover so much. And I had such high hopes!

Neapolitan Cookies I

This recipe turned out pretty well and the cookies were very cute. I substituted strawberry extract for the almond in the pink layer. I think there might be a little too much baking powder, though (it definitely added a flavor that detracted from the cookies). If you look at the other neopolitan/spumoni cookie recipes, none of them have *any* baking powder in them!

Mandarin Almond Salad

I had a salad like this at a friend's party a year ago and was excited to find this. Unfortunately, it wasn't quite as good as hers. The dressing came out way too oily for my taste and tended to coat the leaves. Not sure if I did something wrong. Still a great recipe, though -- I just have to play with the dressing! The almonds are fantastic!!

Seared Scallops with Spicy Papaya Sauce

This recipe was ok. I made it last night for Valentine's day dinner and I expected a lot more given the reviews. The "salsa" was excellent, but the sea scallops were a little bland and got cold too fast on top of the cold salsa mixture. The two just didn't go together that well and reminded me of some dishes I get in trendier restaurants that just don't turn out to be that good because someone was trying to be a little too creative. I don't think I would ever flour scallops again. I'd rather just pan fry them in some flavored oil. Part of the problem may have been that I did use the large sea scallops (which I was told have better flavor) rather than the small bay scallops. In my opinion, scallops just don't have much flavor in any form. I prefer Chinese scallop dishes a lot more.

Honey Bun Cake I

I had high hopes for this recipe, but didn't care for it at all. It was too sweet and too thin. I didn't like the frosting or the taste of the cake despite the addition of brown sugar and cinnamon. I don't really like yellow cake mix cakes, though (chocolate are a bit better).

Giant Crisp Chocolate Chip Cookies

Excellent cookies. Very crisp with that peculiar taste that I love. Not too sweet either. They don't have brown sugar, so if you're looking for that classic chocolate chip cookie taste, this won't deliver. Still, it's a wonderful cookie with a flavor I haven't found in any of my cookie recipes before. I also found that the cookies ran together, which I didn't mind, but, if you do, make sure you place them far apart on the cookie sheet!

Best Brownies

Not bad. Certainly not fudgy, but they are chewy. The frosting was terribly cloying, though. I might make them again, although they don't satisfy the desire for a sinfully rich and fudgy brownie. Addendum: Well, I ate some more of these this morning, the day after they had been made and they were SO MUCH BETTER! The icing didn't taste overly sweet and it had kind of melded with the brownies. Quite tasty! Also, the honey flavor in the frosting (which I hadn't really cared for) disappeared.

Iced Pumpkin Cookies

FABULOUS!! I was looking for a cake-like pumpkin cookie recipe like the one my mom used to make and this one turned out even better (I think!). My mom's used a cinnamon frosting, which I think is much tastier than the white icing included with this recipe, though (just make a white butter frosting with powdered sugar and vanilla and add some ground cinnamom -- yum!). You must try this recipe -- it's terrific. The cookies also freeze very well.

Gelatin Spritz Cookies

I had high hopes for this recipe since I love funky stuff like adding jello to cookies. However, I was really disappointed with the taste. I used lime jello and made Christmas trees with my press, but the flavor was a little icky. Nobody really liked them and I felt that my mom's regular butter spritz cookies, made with almond extract, were far superior. I'm not sure if I picked the wrong flavor, but I hate to waste so much butter trying again. I really wanted to make strawberry-flavored hearts for Valentine's Day, too!

Golden Sweet Cornbread

This cornbread was very moist and had just the right amount of sweetness. It also had more cornmeal in it than other recipes I've tried, which I actually liked. However, like the reviewer below, I thought it had an unpleasant bitterness to it because of the large amount of baking powder. If not for that, it would have been perfect.

Coconut Poke Cake

Awesome coconut cake. I've been making this for a while. However, I recommend adding 1 tsp. coconut extract to the batter and using homemade whipped cream on top, sprinkled with coconut. Yum!!

Gooey Butter Cake III

This was an EXCELLENT recipe! It's very sweet and rich, though (almost makes your tummy hurt!). I was happy that it didn't taste overly cheesecake-ish. Yum!
