Veggie Pot Pie

I wasn't expecting much out of this but decided to try it since it had so many good reviews. Glad I did. This is pretty much perfect. I did change some stuff according to what I had. I used 1 1/2 cups of frozen sliced carrots, 1 cup of peas and 3 potatoes. I didn't use mushroom or green beans. I added an extra half cup of veggie broth. I also double the cornstarch in the mixture. I added some thyme.

I didn't use rum so added some vanilla soy milk. Overall it was too sweet and thick compared to how my grandma use to make it. My husband really enjoyed it though and he doesn't like trying new things or eggnog. So I think if I made it again I would do some tweaking.

Tuna Pasta Salad with Dill

Pretty good. Used macaroni instead, added celery and used sweet relish instead of the pickle juice. Would make it again.

Whole Wheat, Oatmeal, and Banana Pancakes

These pancakes are freakin amazing! I was making pancakes to freeze, 5 of these never made it. Best banana pancakes I've ever had. Omitted the milk powder. And used vanilla soy milk. Also didn't realize that I was out of rolled oats so I used instant whole wheat oats but it didn't seem to have any ill effect. Will definitely make these again and again.

Best Chocolate Chip Cookies

Disappointing. I wanted an amazing chocolate chip cookie, I got a sort of chocolate chip pancake type cookie. While the cookie is good it is not what it 'advertised' to be at all. I had to bake it for 5 extra minutes and they also aren't very appealing cookies as they stay just as white as when you put them in giving it an unfinished look. My husband liked them but me being pregnant and wanting an actual cookie I was rather disappointed I got a pancake. I wouldn't make them again.

Double-Peanut Double-Chocolate Chip Cookies

Really good cookies. I did make some changes. I added 1/3 flour and 1/2tsp salt. I could have probably added more flour, these cookies do come out pretty flat but I didn't mind. They were delicious. I also used chunky peanut butter instead of creamy and 1 1/2c of vegan chocolate chips because 2 cups sounded like too much. I will definitely make these again.
